how can I set zoom to record me and my guest in gallery view? Instead of switching bw me and the guest according to who's speaking? I tried selecting gallery view but it still recorded in speaker view. I have premium. Thanks in advance!

Hi, I am not sure I quite understood your requirement. But if you are looking at recording all the participants at once, you should be able to do it in gallery view.. Here's the link to the process on Zoom - support.zoom.com/hc/en/article?id=zm_kb&sysparm_article=KB0063672#h_ac952845-ed43-4884-8263-4356f98e26f3
There is no specific settings for that.. Do let me know if that helps..
Are you recording locally or, to Cloud.. There is a difference in how both of them behaves.. You will be able to see all of those in the above Zoom documentation page..

Is there value to recording audio completely separately?

Not sure if I understood you correctly. If your question was about separate tracks for the different people on the show, then it absolutely makes sense.. A lot of times you would want to edit each track separately (like instances where the audio levels are different or, there is a lot of background noise on one end etc.)
Secondly, if your question was about recording audio and video separately, then I would say, "Not really". You can always extract the audio from the video if you need only an audio file. So you don't need to record it separately.
