As a European fishmonger I ask. You have a European style knife so why don't you just filet the fish? It looks so akward. Put the knife on the spine and pull through all the way. Why do you have to cut it 16 times from both sides? Also holding your finger on the knife is cringe. Are you really a Chef?

Eating stripe bass sashimi fresh the day you caught is not "thee best way". The texture & taste is not doing the fish justice. Eating stripe bass sahimi for over 50 years, you must first refrigerate the filet overnight first, it is at it's finest when you have some patience, you'll see. Having it "fresh" like they did, the texture is tough/stringy/taste is not there yet...waiting a day, it then becomes smooth/clean taste/best damm sashimi you'll ever have, gotta trust me (just like beef you have to age it).
Ecoflow overwhelmed the posts today, now a griddle flex. Im about done with all these guys. Its just more adds for weak content. They are living like kings for some bullshit.

This is how most normal Japanese sushi chefs filet most of the medium to large sized fishes.
