  • This week was a challenge as far as meal planning went, but we survived. :D Shelby

    I have a chronic shoulder injury as well with arthritis and tendonitis and when it flares up its so painful. I am so glad you're feeling better. I just love your videos, you inspire me so much. I love that your guys stepped up to take care of you. I can't wait to try your orzo recipe but I may use cauliflower rice instead because we are diabetic. Thank you so much for sharing!

      I try not to complain, but the pain was so bad I just couldn't stand it. I am feeling much better now. I think that is a great idea about using the cauliflower rice. I have a bag I got the last time we went to Trader Joe's in the freezer and I bet it would be delicious!!! I just wrote myself a post it note on my meal planner. :D Shelby

    I’m so glad I came across your channel. Sometimes I feel burned out about cooking and need a little inspiration! I tend to cook big too... my family are all adult sized people and often come with friends and boyfriends and girlfriends. Some days I could feed 3 and other days I could feed 10. I’ve always got to prepare a lot of food. You give me fresh ideas. Thanks for all you do!

    I just found your channel, and I have been binge watching for the last 2 days. I'm so glad I found you! I wish I could eat at your house every single day, but since I can't, I'm thankful that you have taken the time to post all the food videos! I also think you are filled with so much wisdom on so many topics....I could listen to you all day......you are a great mentor to younger moms like me, perhaps without even realizing it.

      Thank you Becky and welcome to my channel. We have a great group here! My channel has the intent of sharing pearls of wisdom with my own boys, I know they will appreciate it as they mature. I wish I would have had the opportunity to get a glimpse into my grandparents lives and learned what they had to offer. I am so happy to help you younger moms in any way I can, it is all about being the best we can be for our family. Funny thing is I learn from our group all the time, that is what is so awesome about this group of ladies (and men) :D Shelby

It's times like these when us mothers and wives are out of action and we need the help of the family to come together to help each other.     So glad you are better...that is such a bummer. A couple of years ago my back went out on Easter Sunday. My daughters took over and cooked the entire meal! I bet the boys were so cute and proud they cooked. Good for them! Good life skills. Also..thank you for the seasonal website tips. That will help here in Washington state.

    I never heard of cardoons till I married my husband 15 years ago. That fall we went to where he hunts (huge cabin in the middle of nowhere) and they had breaded and friend them. Their family stays there for Labor Day weekend and have a huge BBQ which we have gone to every year since. The morning of they have the kids go pick the cardoons and they serve them as an appetizer. Super yummy. Served with a dipping sauce like the bloomng onion at Outback.

    Hi Shelby. I feel your pain. Thank u for atleast taking the time to share anythingwith us. Ken did an excellent job shopping. Personally I never write a plan down. I just know what and where to go shopping. I know what to cook, what to buy buy basically what my family needs.

    Glad your feeling better Shelby, I know how it is from going from feeling good to sitting in bed. Those boys need to learn how to cook, I had a single Mom growing up and I'm kind of glad because I had to learn to cook for myself then I worked in many restaurants before joining the Army. I have been cooking more or less all my life and I have never regretted learning. I feel its the number one skill anyone can learn.

      John it has been a rough few days, and these steroids have a lot of side effects. Having those boys learn to cook is the reason I have my channel, I know someday they will appreciate me talking time to do these videos. I was glad they watched the video and made the broccoli beef, it really mead me happy. Home cooking is one of the best ways to financially get ahead, one of the best life skills. Ken is practically perfect in every way, but he cant cook hahahaha he can eat though hahahaha Shelby

    Shelby, I'm praying for you and your shoulder. I too have a bum shoulder...and have had numerous surgeries on that shoulder. It flares up from time to time...so I can so relate to your pain. You are an amazing Mom and Wife! Your guys are so very lucky! Take it easy. Don't be lifting gallons of milk and such for a few weeks, girlie.       Deborah I know you know my pain if you have had shoulder surgeries. They say it is one of the most painful surgeries to recovery from. The bad part this time, I couldn't get my arm in a neutral position so it constantly hurt. But I am feeling much better now. Thank you for the words of encouragement.       Mary thank you for the kind words, us moms have to stick together and help each other out. I learn so much from everyone in our group and I'm glad we all share with one another. Having a large family you would probably laugh at how Ken and I spent a few hours this afternoon. Our store had sirloin on sale for 2.77 a pound, so we bought ten huge roasts and ground them up with my kitchen aid attachment because lean ground sirloin was 5.99 a pound. Now the freezer is stocked with hamburger patties for the grill on those nights when you just need something quick and something that doesn't break the bank. #bigfamilyshenanigans :D Shelby

    I’m glad your feel’n better it’s hard as a mom2 be out of commission it doesn’t happen often and what a blessing that the kids and Ken came 2gether watched your video’s and worked that existing meal plan best they could troopers and you prideful❤️I’ve been plant based for approximately 5yrs I enjoyed trying all the different veg options learning what prime seasons are and still find new things 2try SNAP has great resources available 2help stretch your budget showing healthy options 2families this was such a great video challenging all of us 2plan better spend wisely and eat healthy can’t wait for the Buddha bowls I’m always in awe Shelby take care

    Rutabegas are a Thanksgiving tradition in my family...difficult to peel and cut-up when waxed. Peel, cut up and boil...put a piece of potato in the water to absorb any bitterness..when tender drain mash with butter and salt and pepper to taste.

    Hi Shelby! I'm so sorry to her you weren't feeling well, but thankfully enough you are feeling better now. The food this week looked delish...the boys did a great job taking care of their mommy. When I get off of work I'm going to google those sites, it'll definitely save my family some money if I base my meal plans on specific produce. Im looking forward to seeing what I can come up with!       It has really made me look at things differently. This week I hit a sale on Land O Lake butter and made a bunch of different compound butters for the freezer, and have been trying to get my freezer in order with seasonal items. I'll share more in this weeks meal plan. Shelby

    Hi Shelby...loved your video and I too enjoy meal planning and do it weekly and my husband and I shop together weekly. I'm still working full time so meal planning is very important to me. I work 4 ten hour days so I keep four pretty copper baskets on a shelf in my pantry and after shopping I put all the non-perishable ingredients for Monday's meal in basket #1 including spices. I repeat that for Tues thru Thursday with baskets 2 thru 4. When I get home from work Monday I grab basket #1 then head for the fridge and grab what I need to complete the meal, throw it in the basket and head for the counter/stove to start cooking. Works for me so wanted share with you and your viewers! Hope your shoulder is much better by now. Love your recipes and meal planning ideas.💖

      Carol you hit the nail on the head, meal planning and organization is the key. When you work such long hours, it is such a help to do the types of things you mention. When we take extended trips in the RV I do something very similar, I have baskets for each day. I truly appreciate other people who are organized.....it makes my heart sing.     Hi Shelby...Mama and I send prayers for your continued recovery . I had 3 major surgeries back to back including brain surgery and I have found that there are many blessings in the storm and how very grateful I am for my family and friends. Thank you for the info on meal planning for the seasons. I'm sure we are right in line with you here in NW Ohio. We just made some great collard greens! Sending many blessings to you and yours. It surprises me that two people may go through the same difficulties and one person will see the Blessings and the other becomes disheartened. It is so beautiful that you chose to find gratitude for the most important thing, that is the love and support of family and friends.       We look forward to your response as well. It's refreshing to actually be able to interact with a TH-camr. Thank you for your kind words. Now about those collard greens...lol...the key is finding good smoked hammocks. I boil the hammocks for 2 hours (covering about an inch above the hocks) or until they are falling off the bone. Mama takes all the meat off for me while I wash and rewash and rewash the greens. I soak them in the sink with a cup of vinegar and some salt. I've also used bagged greens but I still wash them about 3 times draining the sink each time. I use the hock stock and add chicken stock if necessary depending on how much juice you like with your greens. I sautee a whole onion in the pan then bring stock to a simmer and add greens a bit at time to wilt. Once wilted I add hock meat, add a tsp of garlic, a tsp of red pepper flakes, a qtr cup of apple cider vinegar, I also use jalapenos when I do the onion...this Bulgarian likes them hot..lol. I don't add salt as the hock stock is salty enough for me...then you just let them simmer away to your desired tenderness. I like them with a tad bit of crunch and I also use some stems..I like the stems. Tell Ken he can thank me by showing us the Amish barn when he's done. I love country living and look forward to seeing how it turns out. God bless you and your family. One gift I got from the Creator was knowing good folks and y'all are amazing! I come from a family of nurses and I was in law enforcement prior to brain surgery so y'all just hit home with us. Tell Ken we thank him for his service and you as well Shelby...nursing is a great service as well. I'll kiss Mama on the cheek for you and we send one right back to ya.

    Mom's plan ahead saved the day. Sorry you were out of commission. Not so fun. God speed in your rcovery. I got my winter cold frame planted with my spinach, kale, mustard greens , carrots and radishs. What I can not grow I buy fresh what is in season and freezer or canned. It gives you a variety to incorporate into meals. Very informative information. Loved the chat. Hope you get to feeling better. Blessings. :)

    So sorry you were in pain but happy to hear you are feeling better!! I would love to be better at meal planning so it is a big goal for me for this next year!! I am only cooking for hubby and I these days, both kids are out and on their own but I tend to still cook as if everyone is still at home! Gives us lots of leftovers!! Since we can garden year round (So Cal) we plan to grow as much of our produce as we can for this next year!

So your challenge is cutting your recipes back or figuring a way to recycle them into a leftover makeover. I still have a few years before I am faced with that, but I can see I might have difficulty with that too. You are so Blessed to have a beautiful garden and my hope is it provides well for you two.     Thank you for the links for seasonally available produce, as you know were also from Ca and live in WA also 4 seasons (we were pertty close to low land snow a few days ago, mountains and passes have been getting it for about 3 weeks now) Anyway, it is a bit of a shock and your so right things are either overpriced or not very good or both and too like to by local when I can.
    I think we have the same washer and dryer, lol
    I'm going to have to try the Orzo dish, looks so yummy!

Someone suggested using cauliflower rice instead of the orzo to make it low carb, I have a bag in the freezer and might give that a try. You mentioned you didn't know what rutabagas are, they are like turnip, but pale orange and a bit stronger...very delicious mashed with butter, salt and pepper.       Pam I was proud they watched my video and then made the broccoli beef. The orzo is really good, someone suggested using the cauliflower rice instead of the orzo to make it low carb. I have a bag in the freezer, so might try that next time. As far as the rutabaga one subscriber said they make it at Thanksgiving. They cook it with a piece of potato so it isn't bitter. I always learn so much form everyone. :D Shelby

      Robin I basically budget 40 bucks per person for our household. It includes groceries, eating out, cleaning products, paper products and personal care items. Any money I don't use each week is rolled over into an envelope that I can use later to stock my pantry, fill the freezer etc....it seems to work for us. Shelby

    Thanks for sharing your plans for the future with us! I must admit, we can't get tahini here or not looking in the right spot in the store. I use regular peanut butter, not sure how the cashew butter would work or if the flavors would clash in any way. Hope you're feeling better now :)

    Cardoons look like celery but you don't eat it raw you really have to cook it first. Best to parboil then cook it in your recipe. Rutabaga is a root vegetable you can cut up and roast as you would sweet potatoes.

    Oh no I'm so sorry you have to deal with that pain....kudos to your guys I'm sure they were worried about you...girl I don't know if you do it or not but having a freezer meal or two can be a lifesaver( casseroles) even your pull it out of the hat meals are better than most people's regular meal.

    I am so glad you are doing better my dear Shelby, I have been having some of the same problems. I guess it is the older you get . But I wanted to suggest something that has helped me. Turmeric capsules, 800 mg daily. It has an Anti Inflammatory which helps a great deal. It is not an instant fix , but after a half of a bottle you can surely tell a difference. It's the absorption rate.
    Also it has many more health benefits. Do some research if interested. Try to find the purest form.
    Rutabaga's , hmm. My husband loves them. They have a flavor similar to a turnip but more complex. They are very tough to peel, and cut. I also cook them in a pressure cooker. Stove top will take an hour or more depending on how many you are cooking. Drain, butter , salt and pepper. Or serve with crumbles bacon and chopped chives.
    You can tell there is a vitamin in them that you do not get from every thing else you eat.
    After a small portion, you find your self wanting more. You have to try at least once.
    Rutabagas, known as swedes in much of the world, are an excellent source of vitamin C, potassium, and manganese, and a good source of fiber, thiamin, vitamin B6, calcium, magnesium, and phosphorus.

Now I have two recipes that call for it, I wonder if my body is telling me something. Thank you for the rutabaga recipe. Whenever I would introduce a new veggie to the boys I would try and make sure it tasted really good, I knew I might only get one chance at them trying it.......butter and bacon is a nice veil for the rutabaga. Now two comments unrelated to the content: I love your eye colour! Are they grey? If they’re brown they’re pretty cool! Mine are brown and don’t look like that : p And I love your botanical artwork in the background. Sounds like you cook for a lot of people which can’t be easy (we’re a family of 5).     Quince is an old time fruit - looks a bit like a pear only fuzzy - doesn't taste like a pear though - buy one to see if you like it. You like Spinach and Kale so you'd probably like Chard. Salsify may be difficult to find - another old time vegetable. Have fun with these new vegies and fruits. I enjoy watching your videos.

      Really enjoying your videos, having just found them😀 in England rutabaga is called swede and we generally eat it mashed with butter and seasoning. For years I struggled to peel dice and boil it like potato, until I learned to put it whole in the microwave and cook for about 20 minutes until soft. Then you can scoop it out and its much nicer. It’s called Singing Swede because of the whistling noise it makes when it cooks! You may already know this as the video was a while ago but I haven’t spotted you using swede so far!

    I'm not sure I could live somewhere that doesn't have four seasons. Especially autumn! I NEED autumn 🍂 Of course, I would also love to live somewhere that has great produce year round. I live in Georgia, The Peach State, and I can't ever find decent peaches, much less really good ones. I'm sure California has some great ones!

    I plan meals with seasonal produce too! But I'm in SoCal so I have longer seasons. 😁. Which brings to mind a question, if you don't mind answering. My husband and I are thinking of moving east. Everyone here (in Riverside) tells us we won't be able to stand the winter and the humidty in the summer. How have you adjusted? I personally want a bit of winter, and there are only so many months of triple digits that can be excused with the phrase "but it's a dry heat". Since you've moved I'd love to hear your reflection on this.

      We moved from Riverside, Ken worked for RSO and his last assignment was Chief of Police of Jurupa Valley. I grew up in So Cal and was afraid I would miss it. I miss In & Out, good Mexican Food (Tina's on University hahahah) and Huntington Beach. Other than that I haven't looked back. The weather seemed like it was triple digits all the time......dry heat means you are baking in an oven. hahahah I wanted four seasons too. I was a little scared to take the plunge, in my mind I thought I'd be living in an Antarctic setting, in reality we had one big storm last winter. I love the 4 seasons!!! Where we live we don't really have much humidity, not sure why? This past few months the weather here reminded me of what winters were like in Riverside as a kid. But the weather has changed a lot in Riverside....don't you think? There is a great book that they have at the library next to the Mission Inn, called Strategic Relocation 2006 by Joel Skousen. It takes into account things you might not consider when considering making a big move. It helped us for sure. There is something rhythmic about living in four seasons....it is beautiful. We live in a small village where everyone proudly flies the American Flag, there is a sense of community and people are family oriented. NYC is 3 hours away, we go and have fun but I don't want city life anymore. The move has been the best thing for us. SHelby

      Thank you so much for responding! My husband is a retired Corona PD (medical retirement) and is now a trauma nurse at Loma Linda. Your answers help me out so much! You describe exactly the things I'm missing! I want seasons and their rhythm, patriotic people, not the city life, etc... I have the Strategic Relocation book! Love it. It really does make you think about a lot. It's funny you mentioned the food because I told my husband the only things I'd miss would be In and Out and good Mexican food! And then I asked if it was weird that the only things I'd miss would be food related. The weather has changed here. It was always hot in the summer but it's getting hotter longer. The rest of Ca may have recovered from the drought last winter but we just shored up a little. The last few years my kids have been eating popsicles in February. This year the triple digits started the first week of June and have hung on. It's been in the 90's here still and next week is supposed to go back to 100 again.

      Shelley we have a lot of family here and wanted a change. Ken's parents still live in Huntington Beach so we go quite often. Plus we really visualize what we wanted in our retirement years. A book called Strategic Relocation really helped narrow down the location. Shelby

      Thanks Angela. I'm feeling much better. I got the planning sheet as a download from CarrieElle.com years ago, it was 5 bucks. I sure have gotten my moneys worth and there are other sheets included that I use like holiday meal planning etc. One subscriber said she still offers the downloads, and she also sells annual meal planners. :D Shelby

      Ms Romero we have 3 biological boys and an unofficial adopted son. My mom who is end stage Alzheimer's lives with us, along with extended family helping with her care. Currently we have a household of ten, but sometimes on the weekends we have family come and stay to help with mom. A few weeks ago we had 14, but it is always a Blessing. I was tagged recently to do a Q&A video which I hope to get done soon. :D SHelby

      I'm smiling while reading your comment. I didn't know how to cook at all when Ken and I got married, poor man lived on peanut butter and jelly sandwiches but they were made with love. We have 3 biological boys and 1 unofficial adopted son. My mom also lives with us, she suffers from end stage Alzheimer's and several family members are temporarily staying with us to help care for her. Currently we have a household of ten. Sometimes on the weekends family comes to help and visit my mom. It is always a Blessing. :D Shelby

    So glad you are feeling better. Last April I got a pinched nerve in my shoulder..finally the second week of JULY it kind of quit hurting! Three months! I was about to loose my mind!       Cinda I can't even imagine 3 months with that kind of pain. When I went to the ER they gave me a shot of Dilaudid and that didn't even take all the pain away. I honestly couldn't have gone through 3 months of it. Bless your heart! I am hoping you are sending me that recipe wink wink :D Shelby
