Sorry, if I made it sound like I paid $30 something a pound for the beef from my local farmer! I was referring to what it would have cost me to buy a beef tenderloin from Costco. I paid last year $4-ish for the hanging weight for half a beef for grass-fed grass-finished beef. When buying local meats the price can vary greatly in different parts of the country and based on what the farmer chooses to feed their animals. One of the awesome things about buying from a local farmer is you can ask them all those questions and know exactly what you are buying.
I am in Michigan and I purchased my beef from a local farmer this past spring and I paid 3.50 per pound for hanging weight and that was processed and delivered. I ordered another quarter that will be ready in January for the same price.
@@featheredfriendshomestead yes, I even asked around at my Azure drop off. I will just keep on looking and praying. I know of people who do buy it...but that's what they pay too!
Becky, do you guys have a generator? You once mentioned that power outages are not an infrequent occurrence. We don’t have freezers, but since both of us work from home, we have a ton of computer equipment. A generator is something we’ve considered after a couple of outages at seriously inconvenient times. If you have one, can you talk about how you chose one & why?
I love how you stated that it took you and Josh 10 years to get to 3 freezers. It's not an easy process but it is atainable. Thank you Becky for always encouraging us.!
It took my husband and I 6 or 7 years to get two freezers, we were very blessed and got them for free, but will likely be looking at purchasing another one in the next couple of years.
It took us 4ish years to purchase our 3 freezers. I cook twice a day every day and we don’t eat out often and no fast food at all, which is the only way I justified getting almost one a year. One for beef, one for chicken and pork and one for everything else. Honestly though, I have enjoyed canning quite a bit of meat recently for faster meal prep. I think that’s an economical solution and takes up less space for people who don’t have room for multiple freezers.
I’m 37 years old I been wanting a deep freeze for so long but never thought it would take me this long . I got one for Christmas I’m told my children I’m finally adult.

Freeze dried corn is amazing. And frees up tons of freezer space. You really need to try it. We store ours in 1/2 gallon Mason jars. Reconstitute quickly and tastes like just picked corn.
I live in the deep south on the Gulf of Mexico. We have a four month hurricane season during summer and early fall. Also many, many, rumbling, tumbling, ground shaking thunder storms. We lose power so often! When I saw your giant freezers the first thing I thought was, "boy I hope she has a generator for backup." I can't tell you how many packed freezers I've lost in 50 years to storm outages. We finally invested in several natural gas generators and they have been a life saver.
I recommend partially filling jugs with water, allowing for ice expansion, and place them in your freezer. They will give you some extra time when the power goes out.
When I get huge carrots at the store, I use a Julienne peeler to make strips and freeze them in bundles so I can thaw them & throw them into Mongolian Beef or stir fry and it turns out beautifully!
Omg when you opened up the fridge with the carrots i remember in the caribbean we make a carrot drink with fresh carrots and sweetened condensed milk. Evaporated milk and vanilla (essence) extract. Itsssss soooo good! If you have way more carrots that you know what to do with, you should try it out! ❤❤❤
Hi Becky. Your chest freezers are so organized. In regards to rendering your tallow, use your Nesco Roaster. My mother always did hers on the stove. But, I have done bear fat in the Neso, it is so much easier. Do it outside or in your garage due to the smell of rendering. Good luck with the rendering.

Love these videos! As someone who is interested in having a from scratch pantry like yourself, I'm SO CURIOUS to know what you spend at the grocery store over a year. I imagine that your grocery bill should be lower since you're doing so much from scratch, but also understand that you like the use the highest quality ingredients!
For the beef tongue I take it out of the plastic and rinse off the blood. Then I place it in a crockpot on the stovetop since you have gas, you may want to put a cutting board under it. Then place the tongue inside the crockpot, and fill it with water until it covers the tongue. I them use a lot of garlic powder and pepper. You can use salt but I try not to use salt if I do not have to. And cook it over night for 8 hours or until tender. Every crockpot is different. In the morning I take it out into a cutting board with a dripped edge or a large bowl and I take off the skin off of the tip of the tongue. It’s thick so you can tell and bumpy. Then chop like you are making chopped pork. Serve with hot flour or corn tortillas, salsa, onions, tomato’s, cilantro and avocado, Yum!!! Serve hot, you can add a little of the hot juice from the crockpot to mix it so it’s not too dry if it is or when you store the rest. I freeze what’s left.
Becky! I love your freezers, you work hard and Everything you have looks amazing. So inspiring! I have the biggest garden this year ( its summer here in New Zealand) and its because of you! Thank you 😊
I would never have a pork Loin or Tenderloin ground up. The loin turns into 3 or 4 different types of meals. The ends I'll use for carnitas and Bar-B-Q pulled pork. The middle I'll cut into boneless Pork Chops (they are so tender) and a roast. The Tenderloins will be butterflied and stuffed. So many options are possible with the loins and Tenderloins.
I like your soft sided totes you use to organize your meats. I also have a freezer chest and I use milk crates to separate my food. Recently, I started using reuseable shopping bags because they are easier for me to lift out of the freezer. Your video is very interesting.

Hello! I don't think I could go a month without chuck roast. We eat it a lot. Have you ever tried your Roast in the instant pot? No stove needed! 40 minutes and let the pressure go out on its own, which is another 40 minutes or when you get to it. It makes amazing pulled beef for sandwiches and you got to try Roast Beef Chilli or a roast beef and cheese on top of your summer salad. I love it so much I can it. Back in 2021 I had an amish pig coming and had to get rid of some meat and that's how it got started. You made me hungry cooking those beans, so I made my Toast Beef Chilli.❤

Thanks so much for the freezer tour, Becky! I watched one of these tour videos when you were are the other house and it had never occurred to use baskets/ bins in my deep freezer. I went out and bought... like 9 or 10 freezer baskets and let me tell you... what a game changer!
I watch for Mark down products at Kroger. I pack spinach to freeze and put in freezer. Lemons and limes freeze for lemon ade. Save so much money. Thanks Becky!
I love your pantry's. I have four freezers just got in touch with a farmer who will deliver. I am going to get a 1/2 cow this will be the largest freezer. I use one of the freezers for vegetables from my garden. The remaining mid size freezer will be for pork when we eat it down. I going to use my old stand up freezer for meal prep left overs. I got a pressure canner last year so I can learn to can and that will free up some freezer space. I did get a whole home generator for protection and peace of mind. Still have a ways to go. I am planning on enclosing my back porch for future plans. I have converted my garage in to my food storage pantry it has taken a while to get there, but I feel so much better. My dad used to boil the tongue with seafood boil spices. Then would make sandwiches on Wonder Bread, crusts removed, thin sliced tomatoes, red onions and iceberg lettuce. A layer of mayo. The tongue was sliced very thin. Best sandwich ever. The soft white bread was a key ingredient.

The piece of meat marked Carne is for Carne asada. Marinate in salt, garlic, beer and lots of lime, then grill it quickly at high heat. Chop semi-finely. Makes delicious "street" tacos with just cilantro, onion and lime on corn tortillas.
Hi Becky. I always love watching your videos for inspiration. Looking forward to the next freezer meal cooking one already! 🤗 Have you ever tried fermenting sauerkraut? Homemade tastes much better than store bought and it's so easy to do. I've done it with white and red cabbage before. We always make a big batch and it lasts ages in the fridge 👌🏼 Blessed Christmas to you and the family 😊🎄

Hello Becky . I love watching your videos. . You are so sweet and loving person. You are so polite . Merry Christmas and Happy New Year .. love your videos. ❤❤
I love carrot souffle. It is nothing but sugar and butter and goodness. A local favorite. Many people call it "crack" because it is so yummy and addictive. Might be a good change up with some carrots.
Nice set up. I have had a stand up freezer for 20 years and it finally started to give out so Black Friday I ordered one from Costco and love it! It’s self defrosting and has that alarm as well. Nice job! Love all your videos! The beef tongue I make every Christmas morning for our kids I will tell you what I do in a second post. Lol
I’m so glad you started using different sized jars for what you need. Same thing with the freezer stuff. Now how about those freezer meals. Some Maybe for 4 meals instead of 6/8. That way you only have to eat them for dinner and 1 lunch x2.5 or freeze the leftovers for lunches later. Have a happy 1st holiday together. 😊🎉 best organization ever.
I just recently cooked up a cow tongue and heart, I did it in the pressure pot for 45 minutes and it was soooo very tender, I truly did not care for its texture so I got it cold and ground it in my meat grinder and the heart meat also, it is really good this way., Makes a great pizza meat.
Becky - - I've been binge watching the last several episodes I've missed. I also went to your Scratch Pantry website and I must say it is soooo much better than the original one. I love it! Will you be posting a spicy carrots recipe? I also LOVE those. And one last thing - will you be linking your videos from the recipes on your website? That would be even better! So happy to see you thriving! I've loved being along for the journey from the beginning. I subscribed when you had 30k! Now look at you, ROCKSTAR!!
When you eat down a freezer add containers of water to make the freezers run more effectively for less. Then in the summer take out the block of ice for the dogs to play with
I think it would be really fun to see you try some Korean style fermented veggies! Of course there’s kimchi but you can do a kimchi style ferment on sooo many different veggies. You already have the Korean red pepper flakes too. That would be so fun!
Enjoying your content Becky! What a great idea to freeze the prewash spinach, I do chopped kale which is so convenient for soups, casseroles, stews, pasta etc., but never thought of spinach. Also love the apple pie filling - another great idea especially when produce is in season and on special. I'll have to check out your videos on how to process carrots for freezing and what do you do with the green peppers as I find they come out mushy after freezing. I don't have a garden & no space for an extra freezer but I always take advantage of seasonal produce especially with great prices. Over the last couple of weeks, we were able to get full size carrots .84 for 3lbs which is an awesome price for our area, stocked up and love them steamed with broccoli.
My favorite freezer corn recipe is “Spicy Sweet corn”. Ingredients are: corn, a little salsa, chopped peppers, cumin, and Mike’s Hot Honey (you can substitute regular honey plus gochugaru pepper flakes). It’s a side dish, not a relish. But we love it vacuum sealed in small bags.
Beautiful veggie freezer! And the cheeeeeeeeese! I would recommend keeping your butter in a freezer bag to prevent your butter absorbing aromas and smelling/tasting like freezer. It helps a bunch! (You can keep reusing the bag, so no guilt)
Nitty gritty life has a Douglas Fir eggnog recipe that has become a family tradition at our house. We forage the pine needles together and make it. It’s really good 😀
This video takes me back to a video you did at the old homestead when you first organized your freezers with those bins with handles. It inspired me and I did the same with my chest freezer. Even wrote up an inventory! Pretty cool stuff Becky! Thank you!💞

Have you ever tried fermenting sauerkraut? Homemade tastes much better than store bought and it's so easy to do. I've done it with white and red cabbage before. We always make a big batch and it lasts ages in the fridge 👌🏼
Blessed Christmas to you and the family 😊🎄
I'm so excited to follow you! I am a mom of 2 busy with sports. My husband is a truck driver, so I do a lot of food prep throughout the week. I Cook his breakfast and dinner for the week. I usually do enough to get me through 2 weeks at a time. My daughter eats very healthy she is a wrestler, so I do a lot of meal prep for her lunches and dinners. My husband's parents have a beef farm so we always have beef and I'm a canner. I can't wait to see your videos. I try my best to grow all are foods and meats come from local. I dry my own herbs as well. I also make my dogs food and my daughter make their treats all homemade. Thanks for taking the time to share with others😁
Hello Becky . I love watching your videos. . You are so sweet and loving person. You are so polite . Merry Christmas and Happy New Year .. love your videos. ❤❤
Thank you so much! I hope you are enjoying this time of year with loved ones :)
I love carrot souffle. It is nothing but sugar and butter and goodness. A local favorite. Many people call it "crack" because it is so yummy and addictive. Might be a good change up with some carrots.
You need to get a wine rack for your bottles. So you can have another shelf for food. Hope this helps
Becky you have been an inspiration to me for a long time now and you have inspired me to start my garden and I just want to thank you.
Great video! I did the totes to from your video love love it changed my whole storage in deep freeze love how you do freeze dried things so cool ❤!😊
That is awesome! Thanks so much for watching!
Elderberry and Apple Jam is a favourite.
I am so glad you popped up on my feed...I love watching your videos!! Completely addicted to watching all that you do!
Carmelized onions are delicious!! I carmelize mine in the slow cooker and then dehydrate them. My favorite thing to dehydrate!
Hi Becky, I have been patiently waiting for this video.😊
I don’t know how you do it! You’re amazing!
You are so extremely organized. I loved looking at your inventory.
What a loving & thoughtful thing you’re doing for your sister💜
Elderberry syrup is great to make too. A lot of great benefits
Great haul! Looking forward to tons of cooking videos from you!!🥰🤎
I buy a bag of precut Tuscan kale and freeze it. Then I can just grab a little and it crumbles up super easily so I add to eggs, soups etc
love learning from you. Wish I had had utube when i was raising kids.
Tongue is so good make sure you scrape the top and it taste like beef roast. So good. ❤❤
My goodness I need you here. I also gave 2 body freezers as I call them. Not a patch on yours. Lovely to pick the meat as you see it. Tidy.
Yummmmmm!!!
Yes! I live for pantry and freezer tours!
We love beef tallow! We have even used it to make biscuits. I still prefer lard in my biscuits.
fyi: if power goes out frequently perhaps you should look into canning meat..its easy..my mom did it, and it gets tender..
Beautiful veggie freezer! And the cheeeeeeeeese! I would recommend keeping your butter in a freezer bag to prevent your butter absorbing aromas and smelling/tasting like freezer. It helps a bunch! (You can keep reusing the bag, so no guilt)
I love how organized everything is. Think I have a project in my near future…
Nitty gritty life has a Douglas Fir eggnog recipe that has become a family tradition at our house. We forage the pine needles together and make it. It’s really good 😀
You must make the pickle coleslaw it is delicious. I put it on everything. Got the recipe from ruth zimmerman.
Becky you can put spices on the Toungh , cook it very slowly ,it's definitely delicious 😋
I must say the idea for frozen spinach is awesome!! I love it!
Becky you are such an inspiration to me and my family. Your garden and food preservation are GOALS!!!
You have beautiful hands. You could be a hand model!
If you love fermented hot sauce, I bet you'd love fermented salsa. It's so good!
I have some elderberry tincuring right now! I made some syrup today too because we ran out today. I love elderberry so much!
I am very interested to see the rendering and what you do with the tallow. Great video Becky
Enjoyed the video a lot. Blessings
Saw you organising your freezers in the past. Tks💐
This video takes me back to a video you did at the old homestead when you first organized your freezers with those bins with handles. It inspired me and I did the same with my chest freezer. Even wrote up an inventory! Pretty cool stuff Becky! Thank you!💞
Elderberry jam is AMAZING! My grandmother used to make it & it was the most treasured of her homemade jams! 😍😋
