Cashew Miso Cheese Makes: 4-5 ramekins 1 + 3/4 cups soy milk 1/4 cup nutritional yeast Handful of thyme 1/2 cup vegetable oil 1/2 tsp garlic powder 2 tbsp white miso 2 tbsp + 2 tsp agar powder 1 tsp salt 1 tbsp lemon juice 1/2 cup cashew nut, soaked 1) Bring milk, oil & agar to boil & stir for few minutes. 2) Blend nuts, yeast, garlic powder, salt & thyme. 3) While still blending, pour in agar mix & blend for 2m. 4) Blend in miso & lemon juice 'till dissolved. 5) Pour mix into ramekins and refrigerate for 4 hours. *Agar mixture can overflow, so keep a close watch. *Soak cashews overnight. It will make them grind into a smoother paste. *Use a high powered blender and not necessarily a food processor. *If mixture starts setting, put it back into the microwave to melt.

Also dead easy and so delicious. I've never made cheese with roasted cashews. I always thought the flavor would be too strong. I always use raw and soak them in boiling water for at least 15 minutes.

Didn't find out until I went vegan and started eating more nuts for the health benefits 😭 Cashews and peanuts are the worst for me, but the other nuts also trigger my eczema. Sometimes I just eat them anyway since the allergy isn't life-threatening. I'm fine if I eat a tiny bit 😝

Hello! The flavor of this is amazing! But I have to ask, after just 1 minute of heating the agar in my saucepan it thickened up a LOT, not at all pourable like yours when you added it to the mixer. Is it the brand of agar possibly? Or my method of cooking? When I spread it into the mold it was very thick like cream cheese. Still tastes good but different mixture than you showed. Popping it in the fridge now. Thanks!

I have about a gallon of them and have been tweeking searches, I only have a phone so info is limited I know,, but what do YOU think.?. Would it Cheese ?? Would the flavor be too strong ?? And maybe you could lead the way, , it could be a new trend perhaps... And without boring you,,, in the cheese talk here , I can't stop thinking that maybe cheese making itself could or should take a slightly different angle, what if it went with more of a Mochi recipe since it has an ammmazing chewy texture maybe even mix it with a Tapioca starch much the way we vegans like cheese to be and then when heated,,, OMGSH it just makes more sence to me. Was diagnosed with gout, rheumatoid arthritis, IBS, colitis and more, Visited a naturopath and he diagnosed I have a potato intolerance. Quit potato,s and the diseases went away. He also wanted me to not eat dairy and grain together. No pizza, no cheeseburger, no grilled cheese for me! Now I can! Yipee!!!! Bought vegan cheese one time and found out after I got home and read the fine print the stuff had potato in it.Vegan cheese is very expensive also.

When I went to the store the other day, the only thing I saw close was arrowroot and xantham gun, but the xanthum was very exspensive so i got the arrowroot. I don't want to do any more online shopping this month so I may have to figure something else out. I want an american cheese substitute [had to stop eating processed food because of kidney disease and sodium restrictions] but I miss the cheesy melt and flavour. Real cheese, eh, not as good to me. Thank you for your videos they are very helpful as I am going vegan for a while.
Hi! I was wondering if you could develop a cultured vegan butter recipe? Preferably one that doesn't require going out and getting a bunch of probiotic capsules--I saw someone on here get around this step by adding cultured vegan yogurt instead (th-cam.com/video/KW4h_cUOgak/w-d-xo.html). She also uses a lecithin product to emulsify the mixture and keep it from separating--I had a hypothesis that agar powder might work the same way, but I haven't tested that. Anyway, I'm sure you have plenty of projects you're already working on, just something to think about :)

It's also the reason I fuck around a lot with sourdough bread and miso, lol. I did experiment with Miyoko Schinner's recipe today, and modified it by leaving a bit of coconut yogurt in the almond milk overnight to ferment + replacing the soy lecithin with some potato starch. It seemed to work well! Bit of a lazy experiment but it isn't separating and tastes great
I liked the recipe, however the agar agar I found made this recipe expensive. And I'm not willing to go there. So I'm sticking with regular cheese. I am also switching from soy creamer back to dairy creamer since it's more affordable & tastes better anyway. I'm also switching back from spelt pasta to regular white pasta. I can't be bothered anymore with the health food industry gouging me.
I’ve had some amazing vegan cheeses, but this one was kind of gross. Sorry if that offends anyone, but I threw it all away. I think there’s too much agar-agar and liquid in this recipe. It’s too gelatinous and loses its cheese-like features. Additionally, the amount of miso and yeast is too much for the amount (too much flavor making it a umami jello). Sorry again for the negative review, but someone needs to be honest! 😬
I've tasted vegan stuff..And I'm not calling it cheese because it isn't..If you are going vegan then you made the choice to leave out dairy something the vegetarians don't have to worry about..SO the stuff is rubbish and that's it it tastes nothing like the glorious cheese..So please don't call it cheese it's just a dense material that resembles something yet tastes nothing like it..Again you made this choice

This recipe is so good I added jalapeños and pepper flakes for a pepper jack flavor!! Do you know if it does well in the freezer to store for later?

Could be due to the agar depends on type of milk (I use camel milk fresh for my daughter) or maybe you scooped a bit more next try with less agar

Agar-Agar with fibre husk?
Agar is what gives the cheese its firmness, gelatin ish, cheese type texture and it also allows it to melt when necessary.

Unfortunatly for the cheddar cheese cashew nuts are about the most expensive nuts on earth...pushing up the cost several hundred %.
i have peanuts for lots of stuff just not as creamy, you can add tapioca starch for creamyness like a few teaspoons. peanuts are cheap as chips
