Most cooks say never overcook scrambled eggs but somehow most of them do. Eggs will continue to cook out of the pan. The secret is to get them out of the pan while they're still slightly creamy. Martha does that perfectly.

Bravo, Martha! Curiously, of all the many online demonstrations of 'perfect scrambled eggs' by renowned chefs, Martha Stewart's is the best... in my opinion. Simple succinct directions and accurate. Her finished eggs are the only ones that came out perfectly, as most people would like. Most of the others' came out too watery and undercooked, or too hard and tough, overcooked. In my opinion, scrambled eggs should be soft, fluffy and moist. Must, must, must be cooked on a very low heat. ( My hint: put the pan at the LOWEST heat FOR AN EXTENDED TIME (not 2 minutes or 5 minutes) so that the pan is truly heated but at the correct temperature. Maybe first thing to do when you wake up, then go to it 20 or 30 minutes later. Sitting in a kitchen cabinet all night the pan is probably too cool to heat up quickly and sufficiently on a low temp. )

Everyone can cook their eggs as they see fit. There is no right or wrong way, only what makes you happy! Food is not about rules and must-do’s. Eggs are a classic comfort dish, they can be used in almost anything and eaten whenever you want! If you like your eggs browned, brown em up! If you like them creamy, get to creamin em! If you like them runny, get those shoes on man! 😂 Cook those eggs however tf you want dude! Don’t let the food police or the uppity European amateur chefs rule your kitchen!!

Everyone saying the eggs are undercooked seem to have completely ignored the part about using a heated plate. That's because they keep cooking after removing from the pan. And if the plate is heated, it will continue the process without overcooking. She didn't say it just because she likes to have her raw salmonella eggs, while feeling the warmth of a hot plate in her hand folks.

Preference on eggs is just like steak...some like it rare, some like it well done. You can easily get eggs beyond runny without getting them rubbery. I really helps to add a tablespoon or two of milk per egg. I thought Martha Stewart, of all people, would know that. My mom taught me that over fifty years ago.

I used some grated sharp Cheddar cheese and a spoonful of sour cream because I didn't have Creme Fraiche, using a pot instead of a pan and found that I kept more moisture in them (I need a cooked egg and I usually cook them to "death") The one thing I Didn't do, although I ended up with soft, moist eggs was to fold instead of continuous stirring, that ended up with a granular consistency. And I nuked my bowl before dishing out the eggs.

Well done, except she didn't warn about residual cooking which is so important when cooking eggs, that if they look done in the pan, they'll be overdone on the plate because of residual (also called carry over) cooking, so plate them on a warm plate when they're ALMOST done in the pan, not when they're FULLY done in the pan.

    I've watched the scrambled egg versions of Bourdain's, Ramsay's , Jamie Oliver's and Nigella's.
I'm now the ultra chef master of scrambled wggs.

Nononono lemme tell u the black way😂😂 Ok so:
    1. Get your eggs
    2. Add seasoning BEFORE u put it in the pan or while you are cooking it
    3. Add milk to make it fluffy
    4. Stir faster than what she is doing in the video
    5. Make sure its FULLY cooked
    6. Whilst you're cooking, chop it with the spatula or what ever youre cooking with
If u see a little white, that's fine. If the color is mixed white and yellow then you are done! *love from a 12 year old❤ have a blessed day
