  • spicy beet burger ❤️
    INGREDIENTS
    * 3 small/medium ish beets, peeled + grated
    * 1/2 cup of oat flour
    * 1/2 yellow onion, diced
    * 1 egg
    * 1/2 cup aduki beans
    * 2 garlic cloves, peeled + minced
    * 1 tbsp tahini
    * 1 tsp mustard
    * 1/2 tsp turmeric
    * 1/2 tsp crushed red pepper flakes
    * 1/4 tsp cayenne powder
    * 1 tsp cumin
    * crack of s + p
    INSTRUCTIONS
    1. preheat the oven to 375 degrees f.
    2. peel and grate beets into a bowl
    3. peel and chop onion and garlic.
    4. add all ingredients into a bowl and mix with fork.
    5. put mixture into the 1/2 cup measure to and put onto parchment on a tray.
    6. push with the back of the measuring cup on top and shape into patties into circles with your hands.
    7. cook on one side for 20 minutes and flip halfway and do another 20 min.
    NOTES
    there should be more beets than onion. if you don’t want to grate it, you can chop it up and put in a food processor. it’s amazing with any smokey flavors. I haven’t tried this, but I could also see it tasting amazing with a side of corn esquites. another option is crumbling it to put into a taco! I made mine with vegan smoked provolone, jalapeño sauce, and microgreens. I melted the cheese in the oven on top for about 3 minutes right after turning off the temperature.
