Micro greens are easier than sprouts though, just fill a pot with soil, sprinkle in your microgreens seeds (or any seeds really of a plant with edible foliage- basil, kale, radish, chard, peas, etc), water & wait about a week. Ready to harvest! I like sprouts better honestly for flavor but they take a little more effort with having to remember to rinse them a few times a day.

+MrLeonthebestest I'm not sure if it would work in this, but if using canned chickpeas, apparently you could use the liquid from the can (or presumably leftover cooking liquid from using dried chickpeas). I've never tried it myself, but apparently it has a lot of egg-like properties. You can even make a faux-meringue with it. People call it aquafaba.
You could also try a "flaxegg" :) This is what I always do ( 1 tbs flaxseeds mixed with 2 tbs of water, let it sit for 5 min. and it has the texture of an egg) :)
The Mega Beet Burgers looks like they would be great as "meatballs" in a submarine sandwiches with a marinara sauce. If they were smaller still, you could put them in tacos with shredded leafy vegetables and Pico de Gallo.
+Craig Jones (CJsWorld) replace it woth 1 tbs of ground chia or flax seed + 3tbs of warm water. let it sit for about 15 minutes and use it to replace the egg. since the egg is just a binding agent, this chia or flax 'paste' works just as well I imagine :)

Donal, once again, job well done. One suggestion I would offer, so as not to stain your hands, try latex gloves. I use them when working with chicken and it just keeps things clean, (including your hands). On a side note, just curious what you would suggest for someone I know who's reciently been diagnosed with diabeties, as well as being a bit over weight. They are now counting carbs in everything they eat. Any thoughts on a low calorie, low carb type of dish? Thank you for any suggestions.

for anyone not wanting to use the egg, replace it with some flaxseed soaked in water. it will work great as a vegan option.

I just made this tonight, this recipe is sooooo good! Added a few spices as well :) your right that oddly enough it does look and taste meaty! 👍
