Alex is like a surprised kid at Jamie's cooking, which is so funny as its so easy what he's doing! He's totally obsessed with cheese, he seems to mention it in every interview even in the days of Blur, and had a cheese rider once, even.
You could use fresh thyme, lemon thyme or even fresh oregano, but margoram gives it a really floral taste.
omg I am so going to have to put this one together for dinner tonight...love the way you use the serving plate as a double boiler ...kudos
Finally, I found food that looks good. I adore the Italian chef you have on your tube. He makes sauce like my grandmother taught me to. The recipe is a tad different, but the technique is the same. Of course I adore you, as well! Thank you for sharing your knowledge with us.
Something with that much cheese in it is surely heavenly.

I remember the show, when you were wondering what that “Italian Scrubber” was doing putting the pasta water back in! This though; is why I love your channel, the other day you had ol Rus on (Pin Pin Mate) but now, I have always known Alex for being a connoisseur of cheese , but have never being able to experience it. Most soft, more gooey cheeses will melt really easily well and give a beautiful silky texture. Maybe try using a Talleggio- this would be very luxurious and creamy!! Also go to your local cheese supplier and see what local cheeses they have- you will be amazed at how many lovely they will have which you wouldn't have heard of!

Jamie and Alex used a mascarpone, then they used a blue cheese called Blue Monday, a goats cheese called Farleigh Wallop and a guernsey cows cheese called Goddess. Enjoy!

grated cheeses do not work well for this method, i have found. you'll need milk if you want it to go creamy
Watched somewhere here too that pre-grated cheeses have added ingredients that's why they're not as creamy as the ones we grate ourselves.
