I know this may be controversial, but my hubby prefers cavatelli when I make clam sauce (con vongole) and made me switch from liguine years ago . He likes that the shell shape gets more of the sauce in each bite. Plus, I HAVE to make extra sauce. Oh, and he loves whole baby canned clams. As I think about it, he is quite bossy about this meal😂
I also use the canned whole baby clams when I just wanna have it✅ And years ago when my son was little, I used the sea shell pasta cuz he liked "finding" the clams inside the shells😄
What a discerning palette James has for a teen! U are both such great parents, exposing ur son to different foods, and teaching him to be open! Bravo! ❤

One of my all time favorites and so easy to make. The canned clams are great especially when whole live clams are not available. I know Italians think using grated cheese on a fish or seafood dish is a sin but to paraphrase Jacques Pepin I like it and I use it.

In AK of course we can get extremely fresh clams most of the time and it looks like you get some big boys over in your area. Looks terrific and my mom, who is watching too, says it looks great! This is how I make my clam vongole too!!! Although your tip of using a little canned clams I will now use in lieu of just 'clam juice'. I always have a bottle of clam juice in my pantry for dishes such as this! Agree, anchovies is a must - just shhhhhh and don't tell anyone. lol Cheers!!!
I love how your son is so articulate & fair on judging as well as your wife. If you don’t have fresh clams would you use 4 cans of calms since you had fresh & 2 cans? Also what would be a good substitute for anchovies or do you omit them all if your family can’t eat them?

This is my favourite ever pasta dish! i was so pleased to see I do pretty much the same as you, except I used to always buy canned whole clams, the only time I got the big fresh clams you used was when I was in the US ...but in the last couple of years the canned ones completely disappeared from uk shops...I asked in one shop and the answer i got was so weird I never asked again: "It's because of Vietnam"! Having watched this, I'm going to have to go to the only place I know that has fresh ones, they're really expensive, and really small...but this video's given me such a craving!
I love linguine & clam sauce & always have since the first time I had it especially the white sauce. You are definitely right about the linguine being the perfect pasta for the clam sauce. Nothing else really does take its place. Also, I love James!! I’ve loved watching him grow up on the show but I moved & I haven’t seen the show lately. Wow, how he’s grown up & he’s gotten so much bigger! He’s so cute & always so positive & sweet & he sure does love all of his dad’s dishes!! 2:54 You're right, here in Italy, for this dish we usually use Linguine. Obviously there are also those who use Spaghetti, but then, as with all dishes, it's a question of personal taste.

Helps to check your clams are alive before you cook them. Remove any cracked, chopped, or those which will not close tightly when tapped. Then check for those that don’t open. Went to a restaurant once where the clams had clearly been manually opened. Waiter said the chef does that when they fail to open. Sent the dish back.

Just made this for dinner. The family loved it. I even had to change my tire, as a nail was in it, so I could pick up anchovies that my daughter took to college with her without telling me. Worth the dirty hands and the praise from the husband after he said I shouldn’t be doing it.
I love how he gives you a 10/10 but then of course…. He has to call you out on the noods. Can’t give a 10/10 without a few critiques! That’s what I would do to my dad.

I can only speak for the UK though, not sure what it’s like anywhere else. A good quality deli or grocer should have the better quality ones imported from Spain or Italy.
LOVE good linguine and clams... Would you add fresh basil to that? I feel like it would go well. Maybe a little fresh tarragon? Just a wee bit, not to over power it. Also a little fresh grated parm on top with some garlic bread to put it over the top.

If you are having cook-at-home date night, this is the absolute BEST recipe to impress! Easy. Fun. Sexy. A good bottle of white wine, a nice salad and crusty bread, a lemon-based dessert. Not really filling. Not much clean-up! You can't lose. The first time I made clams and pasta I felt soooo grown up and confident I could anything. Don't judge me, but I sprinkle with Parm.

This recipe is very similar to one of our Sunday rotations, except oregano instead of parsley, and "Poor man's chesse" (fried breadcrumbs) for topping

People that don't like anchovies are usually reacting to the name. Almost all of the have never seen an anchovy or tried one. They're great.
Or had those ultra salty cheap tinned ones that bear no resemblance to proper ones.
