    This week I had my local butcher cut some “Extra-Thick” pork steaks from a fresh Boston Butt. Also known as blade steaks - or pork shoulder blade steaks - Pork Steaks are excellent on the grill and these thick-cut versions are hearty enough for the biggest appetite!
    I start out by seasoning each side of the pork steaks with a little Killer Hogs The AP Seasoning followed by a generous layer of Killer Hogs The BBQ Rub. Just let them hang out on the counter while you get the grill going.
    I’m firing up the PK 360 for this cook, but you can use any grill set up the same way. Start with a chimney full of hot charcoal and spread the coals out evenly across the front and back of the grill; add about a chimney of unlit coals down the center. This way the grill will have even heat throughout the whole cook.
    You can also add a couple chunks of your favorite wood to the hot coals for some smoke flavor. I use cherry but hickory, pecan, or apple are good choices.
    To slow the grilling process down, I use a raised cooking grate. This creates a little distance from the hot coals and allows the steaks longer time in the smoke.
    Place the pork steaks on the raised grate and cook them for about 20 minutes then flip and repeat. By this time the outside should start to turn a little dark. Remove them from the grill and wrap.
    I use a sheet of aluminum foil with 2 Tablespoons of butter and a good drizzle of honey over the top. Close the foil up tight and get them back on the grill.
    This step tenderizes the pork steaks and keeps them from getting too dark. Use a good probe thermometer and monitor the internal temperature. It should be 190-195⁰.
    Once temp is reached remove the steaks from the grill (careful because they’re hot) and sit the raised grate to the side. Place a set of grill grates over the hot coals and give it time to get hot.
    Carefully unwrap each pork steak and brush the outside with a good sauce. I’m using my new Killer Hogs Vinegar Sauce. Place each pork steak on the grill grates and cook each side about 4 minutes to get a good char on the outside.
    They’re done at this point and after a short 5 minute rest, ready to serve. You can really taste the grill flavor and the vinegar sauce goes nice with the richness of the pork.

    I bought this as my first propane grill. It's been a fun, learning experience th-cam.com/users/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I think it's a bit too pricey after looking at other grills, but it wasn't hard to put together and it works really well. I love the side burner option for heating food during a power outage. I have an electric stove and live in the South (Hurricane season), so this was a bonus. I also bought a cover for it and it has protected it nicely (the Char Broil All-Season Grill Cover 3-4 Burner: Large). Every few grill sessions, I take the rack (or grate) and burner covers off and clean them with a non-abrasive scrubby and mild soap. I wipe the excess off of the bottom as well, taking care to avoid the gas and pilot lines.

    Malcolm, thank you! I made these for my husband and son a few years ago and they were so good. My husband wouldn't admit that I had outdone his best grilling, but there wasn't anything left on his plate but the bone that he'd picked clean. I'm making these again today for my men. I followed one of your videos last week for smoked baby backs. Once again, my husband wouldn't admit that it was good. I think his smoker has a new master. 😉

    Cooking pork steak so I am looking for a new recipe so I go to one of my favorite sites and find this. OMFG .... Malcolm, this recipe is spectacular. My pork steaks were not nearly as thick (about 1/2") so I lowered the cook times cut times and added my own spices and sauce but the technique of smoking, wrapping (w/ butter and honey) and searing the steaks gave me one of the best meals I ever cooked. I know this video is nearly 3 years old and posting an old videos is weird but I have to give props when due. Awesome work and thanks for a perfect recipe.

    Made these tonight and they were sooooooo good, awesome as you said Malcom. I didn't have the exact same ingredients so used my own BBQ rub and instead of honey used brown sugar and the butter. Cooked them on my weber kettle with offset heat. Did use the Royal Oak Chef select, had that and used pecan and Apple wood. Thanks so much Malcom. This is THE way to cook blade steaks!

    I have learned a LOT from watching your vids. They are easy to follow and you have a talent to connect with the viewer. I have followed several of your instructions on various types/cuts of meat and they have turned out great. Can't wait to try these grilled pork steaks. I was raised on a hog farm (Durocs) and can remember how good the dinners were. I am 68 yrs old now and I am enjoying it all over again. Thanks and keep up the good work.

    Hi Malcolm!
    I’m a barbecue chef from St. Louis, the pork steak capital of the world!
    There’s two camps in the city for how to cook a pork steak.
    The first way is pretty much how you did em, and how I do them in my restaurant. About an inch and a half thick, low and slow about three hours, sear them with some brown sugar for some color.
    The second way is to cut em about 1/2 an inch thick and cook it like a steak while constantly basting with a tomato based sauce.
    Both ways are absolutely delicious and I wish barbecue across the country starts making pork steaks!

    Well done, brother, and good video. This is more or less how I already do pork steaks here in Ohio. I've never wrapped them though, but I've recently started wrapping most everything I BBQ, so I'll give it a try, probably with butcher paper instead of foil. A lot of people cook these quick over direct heat like a good beef steak, but slowing down and barbecuing them is the way to go.

      Sounds good, I've always stared them off the coals on the side, then put them in an aluminum pans with doctored -up BBQ sauce for an hour or so and at the end, take them out and put them over the hot coals to make the sauce tacky.

    Tried this out first time last week on my Legacy Char-Griller with coal bed lowered completely down using exact recipe. They turned out delicious. I asked for 1.25"cuts, however the grocery butcher didn't cut the steaks as thick as those shown in the video. I probably used too much charcoal too as they cooked fast. Thankfully my lady loves bark! Trying again now with a twist. Smoking and wrsppingon my WSM and searing lastly on thegrill with grill grates heated up

    They look fantastic Malcom... the cookmore grid works great for keeping the meat further away from the heat so as not to burn. I've used it to grill pork back ribs... done in a 1 1/2 hrs, with good results. Thanks! Biggs : )

    I rarely subscribe or comment on a first time video, but I did for this one and it is great. I love your presentation and that you use charcoal vs propane. I am gonna try some of your vinegar sauce too. Always open to new adventures in grilling.

    Damn those look good. I'm from STL and have been cooking these my whole life. I never thought to wrap them like ribs. Will definitely be giving this method a try.

      nickanto probably because they're so thick. Penny's BBQ on Reavis Barracks in SOCO had giant pork steaks like these, and I think they wrapped them also.

      Im from stl also. What other kind of spice is equivalent to malcolms "AP Rub"?
      I cant find one close to his salt/pepper/garlic rub (tried schnucks and dierbergs).
