My mom used to cook with parsnips. I can’t remember what it tastes like. I think I am going to try again. I made a tray of roasted veggies and was amazing. But my hubbie the junk food guy was not a fan. My son was, so we will eat it a lot more😂.
I buy my organic from Azure standard. I can all my veggies, broths , sauces, and all.
People don’t realize just getting away from store processed stuff with all the junk in it will clear up lots of my son’s Crohns has not flared in 10 months!
Now to master potatoes in my garden. Mine were weird this year. lol.

I love that you are veggie forward. I have to eat a Mediterranean diet due to genetic cirrhosis and that means lots of veggies and olive oil. I also use Greek yogurt instead of sour cream. I love your recipes, especially ones that I haven’t had before like your baked salad and braised cabbage. My family loves them too. I’ll definitely be making the cabbage soup but with ground turkey. Thank you so much for the inspiration!

    • @healthyelizabeth

Love the Mediterranean style of cooking so much! One of my favorite cookbooks is straight from Greece. I need to use Greek yogurt more often, thanks for mentioning that! I am so glad you all are enjoying the recipes!! Yes, always adapt however you need to. 💛😊

Thank you so much for reminding me how to cook delicious, healthy meals! I really enjoy your tips and adding the nutritional facts here and there. I am trying the instant pot ground beef soup that is like stuffed peppers. I have dairy and egg, and corn allergies so it is nice to be reminded what to use in place of that.

I freeze all of my roasted chicken & turkey bones and then add them to chicken broth for my soups. The leftover turkey bones from Thanksgiving have the most intense flavors so I freeze some into an ice cube tray for future use. I also make homemade egg noodles to go with chicken broth.
