没有不含铝的泡打粉,否则就不是泡打粉,铝在其中起到酥脆作用。但是不经常吃,铝含量很有限不会对骨骼有害

至今没有发现不放泡打粉能炸出这样的油条。五十年代至六十年代初,那时没有泡打粉,但是炸出来的油条就是视频里这样的。那时也没有发酵粉,是用面肥发面,面发好后,再用碱面中和。

不知有谁试了成功的,给点动力。我以前失败过好几次。都不敢试了。
阿栗也以前也曾经失败过,后来发现是小苏打和泡打粉过期效力减弱导致。这个食谱是阿栗实践过很多次。只要注意泡打粉、小苏打的有效期(特别小苏打),完全能够成功的。

@@bettyhor1860 炸出锅是脆的,后面会表皮没那么脆,因为家庭炸油条没有商业用的油条膨松剂的一些碱化化学添加剂,不能像商业的保持长时间酥脆。
喜欢吃酥脆可以烤箱复烤一下,马上恢复酥脆的。
