I made this cake today for my brother in law, he requested a funfetti cake. I don't have 6inch pans, but I do have two 8inch. So I doubled the recipe and it was enough for the two cake layers plus a dozen cupcakes! The cupcakes baked at the same temperature (340 F) for 27 minutes and baked perfectly. Haven't frosted anything yet but wanted to share.
I loved the cake itself! I didn’t feel the need to use the Italian meringue and it turned out just fine with the buttercream. Just chilled it and it was very good thank you!
As a professional Baker (who's used to using commercial cake mixes) I'm impressed with this recipe! It's moist & super easy to make. The only thing I'd like is a tad more volume/fluffiness & vanilla flavor. Any tips??? ...I ran out of my commercial cake base for orders & in a panic I turned to TH-cam & found this video. It's a blessing that the host goes straight to the point instead of chit-chatting about all sorts of random things so I could get right to making the cake... He gives you very crucial tips for making it successfully from scratch and I appreciate that. Thank you so much for sharing & being so gracious! Ps- I'm thrilled that now I can make cake without a bunch of artificial ingredients, preservatives, or fillers like my base had. Yay!

nichole gaffney Not a professional myself (just a baking enthusiast), but your intuition is correct - I would whisk the egg whites until very soft peaks - leave this out of the other wet ingredients until you’ve mixed the dry into the non-egg white wets. Then gently fold the egg whites in, similar to a sponge. As for flavour, I’d use my own discretion on how much vanilla to add - I’d personally double the amount he added to the cake, without detriment to the structure, especially if you use could quality pate and not cheap essence/extract (which has alcohol in it). Happy baking and I hope the tips help!
If ur like me and don't have those cake strips u could also take wet paper towel and wrap it in aluminum and wrap that around. make them the full width of ur pan. Does the exact same thing

Made this cake for my daughters birthday and I used a 9'' cake pan.As he says I doubled the recipe. I am glad I did not doubled the frosting ingredients it was more than enough with the original recipe.I had to do the cake without the Italian buttercream somehow it did not workout ( I did it twice once following it with this video and another time with the video he has explaining how to do it) I was fine only with the frosting. I loved the biscuit but not so much the frosting it was really sweet.
I would just like to say thank you so much. I have been making cakes for months and they would taste delicious but look terrible, but because of all your cake videos with tips and tricks, I finally made a cake that looks good and tastes good.
I like that the cakes turn out moist with the pan strip, but especially for beginners who are just starting out, I tried baking one without the pan strip for about half (ok I forgot half way through) and it turned out almost as well and held it's shape for decorating, and was easy to transport. The 2 tiers that I used the pan strip on for the full time broke easily and I had cake on the floor because they were so dense and moist :(

I really really love the outcome of the cake. The only thing was the amount of sugar suggested of a little too much for my family. The only alterations I did was I used the whole eggs instead of the whites and I used 1/2 a cup of yogurt instead of sour cream as I doubled the whole recipe. That's it ! The taste was awesome 😋. So. Don't try this with UK fetti. They have different colouring in which is not bake stable and I promise you- you WILL be disappointed. I have fetti someone brought me back from a trip to USA...but it contains colourings not legally permitted in the UK so use at your own risk. Happy baking.
Don’t use the german sprinkles either. I think the chemicals missing in the european sprinkles are the ones keeping the colors from dissolving. But apparently it’s not allowed “for human consumption”. Whatever, I want to make a sprinkle cake! I’ll ask my mom to bring sprinkles from the US in the summer...
fyi, as a professional baker/chef i recommend explaining the interferent when making italian buttercream. A small amount of acid is essential for guaranteeing no sugar crystals form in your icing. I suggest lemon juice or in a pinch clear distilled vinegar.
I just made this cake and oh my word it is so tasty and beautiful! I doubled it for 8" pans and it is just enough ... next time I'll triple it to leave me some cupcakes because I don't want to drop the whole thing off without some for tasting purposes 😋

Some people prefer to use a hand mixer for recipes that require and lot of scraping down the bowl (Having just made twelve boxed cake mixes with a standing mixer where you need to stop mixer, raise the paddle, try and reach around in the bowl to scrape the sides and then lower the heavy mixer back into the bowl and continue to mix, I wished I had a portable hand mixer.) A stand mixer works great for recipes like icing, or egg whites that require long whipping times.

Don't melt the butter. You should let it sit out for a hour or more until it is room temp or soft
There's also a point where you can over whip or over cream the butter before you add the sugar, so be careful about that.

Antria Smith Your cake can become dense. If you over mix it. Also, if you’re used to box cake made with oil. Scratch butter cakes are denser/sturdier.

Has anyone tripled this recipe to make a 9inch cake? Because tripling the ingredients sounds like too much!
its0my0tube I know you commented a month ago but if you’re still wondering, tripling the recipe is enough to make three 9 inch cakes that you would then stack, just like he did here. So technically 3 cakes

3c sugar

9 egg whites
1 1/2 c sour cream
1 1/2 milk
3 tbs vanilla
2 1/4c butter
