Made this today and it looked ok but tasted good. I think I really struggled on the cream stabilizing. I used Silk’s non-dairy whipping cream but it got to soft peaks but not thick enough like in the tutorial. The cake is definitely on the sweeter side. My fiance enjoyed it for our 2000 days! Will definitely try this recipe again once I find a better non-dairy whipped topping. If you have any recs that worked for you, please lmk! :)

I messed up the first time so here's the mistakes I made and tips so you don't mess up and waste ingredients like I did D: DON'T OVERMIX WHEN ADDING THE FLOUR PLEAASE this is the main reason it didn't work out the first time :( literally fold until it's JUST mixed and you can't see flour anymore heat up the water to put the egg mixture on BEFORE adding everything together!! it speeds things up!! also, preheat your oven at this stage as well cuz letting the cake batter sit for too long can also mess things up im pretty sure :/

I made these yesterday and they turned out amazingg. The cake was soft and deliciouss. Just that while whipping the whipped cream, it didn't turn out as thick and fluffy. When I beated it more, it became a mixture of solid and liquid so I had to remake another one with a not-so-thick consistency. (maybe it was the speed of my hand mixer ://) Hence I wasn't able to decorate it well and the wording just sank in. But it still tasted good thoughhhh despite the looks haha :DD

@@kelvinlin5642 oh yes! Dairy whipping cream is more delicious but the extra fattiness makes it more creamy and harder to hold its shape for decoration. I can’t remember the ratio but I think if you can add meringue powder (try .5 teaspoon at a time, it’s powerful stuff!) it can give you a stiffer cream. Just be careful it’s not too stiff then to spread lol

Yeah if you overeat it or start too fast it's will separate into butter and buttermilk. At least you can make butter with it!

Was your cream cheese at room temperature? If you used it right from the fridge (cold) it will resist combining with the sugar.
