nobody should ever care how much fat is in their ice cream. I hope you are not still living in the sugar industry mass disinformation that fat is evil. PS: then I saw the xanthan gum. the whole point of making in house icecream is to have almost full control over the crap it goes in it. guar, xanthan, artificial sweeteners and so on all mess with your gut. icecream with all that junk can be found in any store... there is no need to make it at home :)
