I agree. The kikiam I grew up with looks totally different from the fried ones in the street.
Yeah. The ingredients of street or fake kikiam:
1/2 kg market fish scraps
2 cloves garlic
1/2 onion
1/4 tsp white ground peppercorn
1 tbsp salt
1 tbsp sugar
1/4 cup cornstarch
1/4 cup all purpose flour
1 egg white
1 tbsp cooking oil
Compare that with original
KIKIAM RECIPE (NGOH HIANG)
700g minced pork
300g shelled prawns,
1 large red onions,
1 whole garlic,
1 large carrot,
1/2 cup cornstarch
1 heaping tbsp five-spice powder
2 tbsp sugar
beancurd sheets (important difference)
salt
oil
I’m not being boushie as I will eat anything: isaw, balut, adidas, walkman, helmet, betamax, etc… but I refuse to eat street-version kikiam just because it is wrong. Real kikiam is delightful in whole different level.
People are propagating error calling whatever that is “kikiam”- NO!!!
