    Hey man, look into using sodium citrate to make cheese sauce out of any cheese like cotija or feta that normally don't work like that. Modernist pantry has some good videos on this. Really opens up the Mac world and removes the need to add any flour from some recipes.

      Yeah. I use sodium citrate sometimes. But imo it still doesn't beat the flavor of a butter and flour roux.

      💯 and I think sodium citrate is also what is used in the processed cheese slices for this very reason.

    I made the OG mac and cheese tonight. I can't believe it is possible to make mac and cheese this good with this much protein and good macros. This recipe is amazing, and it's so easy to make too

    I've made this a few times now (using Barilla Protein+ pasta) and it's great. Last time, I tried adding a spoonful of King Arthur's "better Cheddar cheese powder," and somehow it took it to another level. Both the flavor and the texture of the cheese sauce were improved. I can't believe how good it was. That powder adds 70 calories to the whole recipe, with 4g protein. Worth it

    All you need to do is boil some macaroni and then mix in Greek yoghurt and cheese into it. Frying up some onions and garlic and can even add a little of the boiled mac water to stiffen it with the starch but not needed

    What's nice is the macros are already pretty decent as is for a good quick meal. But anyone can easily bump the protein by using homemade chicken to get the oil/breading lower. Can't wait to try them out.

    I have made your Oreo McFlurry copycat recipe and it's amazing!
    Out of curiosity, have you made a version of chicken that is similar to Tysons air fried chicken? It'd be amazing to get something similar to that with a bit better macros!

    This looks great and I cant wait to try
    Only thing I'll say is I find taking the finished mac into a pan and baking/putting under the broiler for a few mins adds some flavor and depth imo
    Additionally throwing in a handful of real bacon bits (1.5f 3p per serv) or some center cut bacon also adds a lot of flavor

    I just made the Buffalo Mac and cheese, and it's really good. I made it with the chickpea pasta for the added protein. Next time though I'm gonna make it with regular elbows. I need that real pasta bite iykyk.

    You could also try adding nonfat Greek yogurt from Costco! Excellent video!

      I used some Oikos pro yogurt (25g of protein/ 160 calories per serving) and it worked really well! I usually add sour cream to my Mac and cheese as a cheese melting conduit, but swapping in Greek yogurt added so much protein.

    If you use bone broth, you will add even more protein. Approximately 9g per cup used!

    Just made it. Was great but I’m not sure I’ll make it again since it was a nightmare to clean the bottom of the pot since the milk had burned a bit. Not sure how you managed to keep it at high heat. I was stirring the entire time too.

    I didn’t have a scale to measure grams yet, so I kind of eye balled it and did it according to taste. It came out pretty good. Tasted great when it was hot, but when it cooled down, almost tasted too cheesy and thick. Maybe too much corn starch?

    Just tried the OG mac n cheese, not sure where it went wrong but the mac is bathing in liquid, it hasn’t thickened at all even with the corn starch. I follow the recipe to a T. 😢

    Mine *always* looks like soup when I mix in all the cheese ingredients. It takes a long time for it to look like it does in the videos.

    Damn you North Americans and your plentiful fat free cheese options. The best we can get here in Australia is 50% reduced which tastes great but still has too many calories. Great work as always with the recipe Nick but the frustration at not being able to source ingredients makes me remember why I rarely watch these videos these days. I still make a variation of your choc/mint protein shake or ice cream though and you'll always be the king when it comes to that. Thanks heaps!

    So I recently found you and the recipes are looking bomb, I am really looking forward to trying some especially the ice creams lol. I have a question though, for a recipe like this, the ingredients in the Velveeta surely can't be high quality and looks super processed. How do you think the quality of ingredients in some foods impacts or matters to personal nutrition as a whole?

      Hey Joel! Welcome to the channel.
      In my opinion as long as you are using these recipes in conjunction with high fiber foods/fruits/vegetables as part of a balanced diet, there is nothing wrong with using processed foods. Also, if I am choosing between people still enjoying these meals and staying leaner/normal bodyweight vs people yoyo dieting from super clean foods, falling off, gaining all the weight back, and being obese, I would rather have them eating more processed foods. Being obese causes just about every issue that you can think of that can shorten lifespan so I would rather have someone eat some mac and cheese, be lean, and be happy. Hope that makes sense.

    Fat free, pre-shredded cheddar was a total disaster call. Everything else was fine thankfully because you used the processed cheese with sodium citrate. And when you said it looked thin and liquidy, it was already on the thicker side lol. Any more set than that you could mortar a brick building.

      I know it may seem like it, but its really not chaotic. It just seems that way because of the pacing of the video. Video is barely 8 minutes and shows two recipes, each of which take about twice the time of the video itself. Its simply unwrapping and weighing out a few ingredients and stirring.

    Great video besides the last shot--have no idea how anyone got brainwashed into thinking that disgusting sound was appetizing (or if anyone, yourself included, actually DOES lol). Like the South Park scene where the two guys are speaking publicly behind a podium and to simulate dead person sounds they instruct everyone to close their eyes then shove their fist into a jar of mayonnaise repeatedly. It's not your fault--something went terribly wrong on the internet and all this weird ASMR stuff proliferated. It's unclear if, short of the gooners and perverts, anyone actually *likes* that shit, or if people just include it in their videos because they were *told* that people like that shit. I've never met anyone in real life who does. Either way, I made homemade mac and cheese all the the time but I'm adding this version to my meals list because it'd be interesting to try your method. Great job!

    You lost me at velveeta. Bro, that shit is like 1 chemical compound from plastic. Between that and all the processed oils you use, these are incredibly not good for your health. They may help you lose weight, and I love the idea, I just wish you would use more healthy options. Like this dish is great without the velveeta if you could find a way to remove it entirely, just using other whole unprocessed cheeses.

    Bro... Velveta? Use real food. Healthier alternative meals should be just that, Healthy-er, the word healthy is right in the word healthier. Velveta cheese, super processed inflammatory junk. Losing weight is cool and all, but like you should promote using real ingredients. All you have to do is be in a calorie restricted daily intake and Eat whole foods. If you want real mac and cheese, eat the real deal, just make room for it in your daily calories. Its like.... Going to diet soda to be healthier lol. Everyone knows that kind of calorie cutting is Garbage for your actual internal health. Use real cheddar, maybe cut calories by finding a recipe that doesn't use heavy cream, or use lower fat milk if needed, but don't start going into super processed stuff🤦

    bruh these are the kinds of videos that matter in life! Dead serious imagine if more people cooked like this> Imagine that. People can eat so healthy and tasty that it's almost not fair. SO much weight loss would happen, like myself, from watching these vids if people ate this stuff no joke
