To increase the flavor of the spices in the final cookies I mix all the dry ingredients in a container with a lid and let them stand covered overnight .thank you for your delicious pastries .

In the Netherlands when we are celebrating Sinterklaas (in the Netherlands, Sinterklaas is a holiday for the children where they believe that sinterklaas comes out of the chimney at night and puts a little present pepernoten into your shoe. Pepernoten are speculaas but in the size of a button) eat speculaas all the time! It's a really traditional cookie here when drinking tea or coffee. We even put speculaas on a slice of white bread with some butter :)

I love Speculaas....I bought the Speculaas cookie molds from Europe and made some this weekend....I like the buttery crispy cookie I grew up eating....yummy!!

Just made these cookies 🍪 and only used cinnamon and ginger since I don’t like rthebitber spices and it came out good but next time I’lm only gonna use Cinamon! Lol even ginger by itself was too spicy and hot for me! Guess I really like sweet cookies 🍪 Lol for sure bake it only 15 mins to get that soft texture and that’s the kind of cookies 🍪 I like!
I bet it would taste great just leaving the dry ingredients to flour and ground almonds and baking powder and add in vanilla for more of a butterscotch/caramel flavor.
