My only critique is that the video becomes a bit tedious when you demonstrate each step of the way. I think most of us know how to chop mushrooms or tomatoes! 🤭😉
I don’t eat meat either. My wife takes one shredded zucchini, squeeze out all liquid, add mozzarella cheese,(100gr) and three eggs. Mix it well, put mixture on parchment paper and bake 360° 35-40:minutes, cool it off , gently turn it over and put any stuffing and then roll it. In this recipe fewer carbs and delicious.

The recipe for tomato and cucumber salad with walnut dressing was really excellent as well. Dessert was a cooked pears (olive oil, pomegranate balsamic vinegar, sugar, heavy cream). It's a lot of work and time -- the results were exceptional. I made the meat loaf the day before and the salad a few hours before my guests arrived. They were from Venezuela, had second helpings and everyone felt well satisfied. I will make this again for special occasions.

Ok, well I tried this recipe, and it was definitely a hit. We both loved it. It was easy to make, although it took reading through it a couple of times, to make sure I got everything in the right order and the right place. But, this one gets a big WOW from us at our house. Thank you for sharing
This looks amazing. However, this looks like it would take me 4 hours from start to finish. It might save time to sauté the spinach and mushrooms together. How long did it take you from start to finish?

I noticed you didn’t use breadcrumbs, as is often used in meatloaf. I made it exactly as you showed, and after rolling it up, the meat started to fall apart. I smashed it all back together and got it in the oven in one piece. Let’s hope it doesn’t fall apart when I try to slice it. Fingers crossed. It smells delicious! All done, and the meat did not fall apart when I sliced it! Woohoo! Thanks!

best meatloaf is called italian one ,,, add real imported grated cheese to the mix , sliced sharp imported provolone and sliced imported mortadella then bake ,cover loaf with real marinara sauce
I’m wondering about you not putting in breadcrumbs. Would it make it too tender to hold up? I feel like the meat part would be too hard without them. Baked ground beef without breadcrumbs can be like a lead weight. Has anyone made it with breadcrumbs?

I enjoyed the video. Looking forward to making a meatloaf this way. If items that are to be used in the recipe are cut up, shaved, sauteed etc before assembling the meatloaf, things would move along faster. Also a typed narrative for the spices would be helpful. Thank you!
You poor thing. Sorry you are going thru that. May I suggest lots of probiotics + Colostrum, fermented foods like Sauerkraut, Kimchi, Apple Cider vinegar to put gut bacteria back in place. Also drink lots of carbonated water. Get a CO2 tank and fill up bottles with homemade club soda. This will oxygenate your body fast, and give you energy.
i'm a meatloaf connoisseur! It took all my inner resolve not to get up and cook along with the video. Needless to say, I was glad that I had already dined before watching it. By the way, I also love the track you played! Delicious experience all around! Glad you added that extra layer of sauce. The salad looks scrumptious, too! I can't wait to try this particular pairing!
I loved the steady pace of the video so the recipe could be written down...then it's almost too pretty to eat. I would have used sweet red peppers with the cucumber because I am not allowed to eat tomatoes. I have a rare blood disease that causes platelets to drop really fast, so I can't really eat them, but I grew up on cucumber salad, which is yummy! Very nice presentation!

Lovely recipe...thanksfor posting it.. No need of the music...Can it be baked without aluminum foil? An Asian would need chilly powder n pepper powder..in the meat roll. Salad is gorgeous 😍
It seems very dense almost dry inside. I usually soak white bread in milk, squeeze out the excess milk in the meatloaf mix. Plus I add grated Romano cheese. It’s a nice sharp contrast to the fatty meat. I love the roll idea instead of traditional loaf. But I agree with most comments that the chopping is excessive. Thanks.

best meatloaf is called italian one ,,, add real imported grated cheese to the mix , sliced sharp imported provolone and sliced imported mortadella then bake ,cover loaf with real marinara sauce

I’m wondering about you not putting in breadcrumbs. Would it make it too tender to hold up? I feel like the meat part would be too hard without them. Baked ground beef without breadcrumbs can be like a lead weight. Has anyone made it with breadcrumbs?

I enjoyed the video. Looking forward to making a meatloaf this way. If items that are to be used in the recipe are cut up, shaved, sauteed etc before assembling the meatloaf, things would move along faster. Also a typed narrative for the spices would be helpful. Thank you!

You poor thing. Sorry you are going thru that. May I suggest lots of probiotics + Colostrum, fermented foods like Sauerkraut, Kimchi, Apple Cider vinegar to put gut bacteria back in place. Also drink lots of carbonated water. Get a CO2 tank and fill up bottles with homemade club soda. This will oxygenate your body fast, and give you energy.

i'm a meatloaf connoisseur! It took all my inner resolve not to get up and cook along with the video. Needless to say, I was glad that I had already dined before watching it. By the way, I also love the track you played! Delicious experience all around! Glad you added that extra layer of sauce. The salad looks scrumptious, too! I can't wait to try this particular pairing!
I loved the steady pace of the video so the recipe could be written down...then it's almost too pretty to eat. I would have used sweet red peppers with the cucumber because I am not allowed to eat tomatoes. I have a rare blood disease that causes platelets to drop really fast, so I can't really eat them, but I grew up on cucumber salad, which is yummy! Very nice presentation!

It seems very dense almost dry inside. I usually soak white bread in milk, squeeze out the excess milk in the meatloaf mix. Plus I add grated Romano cheese. It’s a nice sharp contrast to the fatty meat. I love the roll idea instead of traditional loaf. But I agree with most comments that the chopping is excessive. Thanks.
