Puerto Ricans make something similar called stuffed potatoes, filling with cooked ground beef different ingredients. Great minds think alike (GMTA). I have a recipe that is almost identical to the second recipe. The only significant difference is I use baby red potatoes as they bake to a crispier texture and I sprinkle grated Parmigiano Reggiano cheese over the potatoes before baking. The Parm bakes into a crispy cracker on top of the potato that is pretty tasty. P.S. This recipe will work well with chicken wings too.
Boil your perogies, drain, cool them down and insert sticks into the bottoms of each to look like a lollipop..then coat in flour, dip in beaten eggs, then into some breadcrumbs, and deep fry them in hot oil to cook. Once browned, use the sticks for easy removal from the oil when browned. Serve with tomato or cheese sauce for dipping...best with dour cream with chopped dillweed!
I love the whole idea of this meal. I did notice a speck of blood on the last egg you cracked into the bowl. Some culinary schools teach chefs to crack each egg in a separate bowl, so as not to contaminate the others. Blood could mean salmonella poisoning, which can be fatal. The risk is probably really low, but I would have thrown it away (maybe you did this and you just didn't show it in the final cut?) Other than that, fantastic to watch, it gave me a lot of ideas. btw. I live on the Gold Coast in Queensland, Australia, we are just heading into summer, with an average temp of around 30c. I am like you, a cook who enjoys making people happy with food. I am about to start a food truck business and hope to sell chicken wings and apple smoked pulled pork on a roll.
