Pumpkin Bread/Copycat/Keto

Join me in the kitchen on todays video as I bake pumpkin bread. Copycat Starbucks pumpkin and Pepita loaf and keto pumpkin bread. Below is the recipe for the Keto bread I got from Pinterest. You can also search Pinterest for the copycat Starbucks pumpkin and pepita loaf recipe
Keto Pumpkin Bread
1/2 cup room temp butter
2/3 cup granulated Swerve sugar (I used brown sugar swerve)
4 room temp eggs
3/4 cup pumpkin purée
1tsp vanilla
1 1/2 cups extra fine almond flour
1/2 cup coconut flour
4tsp baking soda
2 tsp pumpkin pie spice
1tsp salt (or a little less) it was a little salty but I liked it
OPTIONAL TOPPING (I put pepitas on mine)
1cup chopped walnuts or pecans
2Tbsp butter
1tsp pumpkin pie spice
DIRECTIONS
*Preheat oven to 350
*Line a loaf pan with parchment paper
*In a large bowl cream together butter and sugar until light and fluffy
*Add in eggs one at a time
*Mix in pumpkin and vanilla until we’ll combined
*In a med bowl whisk together almond flour, coconut flour, baking powder, pumpkin pie spice & salt
*Add into pumpkin mixture and mix until just combined and batter is thick
*Spoon into prepped pan
Optional
*In a small saucepan heat nuts, butter and pumpkin pie spice about 3-4 minutes ( I just sprinkled pepitas on
top)
*Bake 45-50 minutes until toothpick comes out clean when placed in center ( if nuts are getting too brown cover with foil
*Remove and let cool completely
*SLICE & ENJOY
