Great Curry! Made it today and enjoyed the real indian taste. I added sliced, fried garlic for an even more powerful 'smokey' effect which worked very well!
A time shortcut :- prick aubergine with fork and microwave high for ~9 mins then broil skin under grill/ broiler few mins skin blisters and smoky flavour imparted.. Scoop out flesh and cont recipe as normal saves you time and energy using the oven😉

I love yo grill my eggplants! The skin gets scorched and it's really smoky, the oven method doesn't taste smoky, just baked! It's a great side dish or even main dish! Yumm
Another great recipe, but please just drop the canola oil for a healthier alternative. 😉 Also when picking eggplants look for the male eggplant which has less seeds and tends to be less bitter in general. They are the ones with the rounder and more shallow indentation at the bottom. The females have deeper indentations that are shaped more like a gash.
For anyone that reads this in the future, this is a myth. Fruits do not have a sex. The flowers do, but the fruits that grow from them do not. The dimples at the bottom also don't suggest the contents inside. The larger the eggplant, the more mature and more seedy it is. If you want less seeds, choose ones that are smaller.

One type has a roundish dimpled area at the blossom end, and the other type has a more oval-shaped dimpled area. I find from practical experience that this is generally true .... but yes, clearly the younger less mature eggplants will have even less seeds.

I had thought of trying a curry, but I was planning on cubing the eggplant. I think this will be better and look forward to trying it.
Probably taking a risk at getting beat up by indians , but as I don't have a broiler in my oven would it be okay to firstly burn the skin a bit with the gas burner before putting it in the oven for the smokey taste? And to make it more saucy at the end, would adding some coconut Milk be a nice idea?

Just made this. I blended before adding the eggplant because I don’t like chunks of ginger. It’s super tasty, but I think I will fire-roast the eggplant next time for a smokey flavor. You can’t get a smokey flavor with an oven. No smoke= no smoke flavor.
I didn’t see any cumin seeds or turmeric add in this or green chilies 🌶, and real Punjabi always sauté the ginger/garlic paste first not after the onions. Also the tomato gets purée, nice try
Awful is a bit of a strong word Juliana, lol. This preparation is quite delicious, and easier for those who don't have time to roast over a flame. But you're more than welcome to do that before you prepare the recipe :)
