North Indian Chicken Korma

  • This Chicken Korma is creamy, and velvety with the perfect hum of spices, and is definitely up there as one of my favourite curries of all time!
    The caramelized onions and spiced yogurt give this korma such an amazing depth of flavour. Great over hot basmati rice or served with warm chapathis. Enjoy! :)

    RECIPE
    INGREDIENTS
    5 tbsp, Canola Oil
    2 medium Onions, chopped
    10 raw Cashews
    1 cup, Whole Yogurt
    1/2 tsp, Turmeric
    1 tsp, Coriander Powder
    1 tsp, Red Chilli Powder
    2 tsp, Garam Masala
    1 stick of Cinnamon
    3 Green Cardamom Pods
    1 Black Cardamom
    5 Cloves
    10 Black Peppercorns
    1 Bay Leaf
    1 tsp, finely grated Ginger
    1 tsp, finely grated Garlic
    1 lb, boneless skinless Chicken Thighs cut into big chunks
    1 cup, Water
    Salt to taste
    Fresh chopped Coriander to garnish
    METHOD
    Place 2 tbsp of oil in a heavy bottom pot, and heat on medium-low. Add onions and slowly sauté for 10-15 minutes until deeply browned. Allow to cool, and transfer to a blender with cashews. Blend until smooth, adding a little bit of water if necessary to form a thick paste.
    In a bowl, whisk together yogurt, turmeric, coriander powder, red chilli powder, and garam masala until fully mixed. Set aside.
    Heat remaining 3 tbsp in same pot on medium-low heat. Add cinnamon, green and black cardamom pods, cloves, black peppercorns, and bay leaf. Sauté for 15-30 seconds or until cloves have puffed up. Then add grated ginger and garlic and fry for an additional 30 seconds.
    Increase heat to high, and add chicken. Cook for 5-7 minutes, stirring frequently until the chicken no longer looks raw on the outside.
    Stir in spiced yogurt, onion paste, and salt to taste and reduce heat to medium-low. Partially cover with a lid and cook for 10-12 minutes, stirring often until the oils begin to separate along the edge of the curry.
    Add water, and increase heat to medium. Cook for an additional 15-20 minutes partially covered until the chicken is tender and cooked through.
    Remove from heat and garnish with fresh chopped coriander leaves. Enjoy! :)

      ToraJutsu01 We don’t let the flavors fully develop before the next step. I have figured that out, and have learned to slow down Nd enjoy the process. Makes all the difference in curries,

    This tastes even better when the flavours are left to fully develop in the fridge overnight then reheated the next day... pure gastronomic bliss!!

      yes !! i love making curry but I looooooooooooove the left overs more because it just tastes better the next day, i'll reheat on stove and thin it out with some chicken stock.

    I made this last night and I’m convinced it was the best curry I’ve ever made. I made a double batch and actually used a little less onions than asked for- I wasn’t sure how it was gonna turn out. As soon as I added the onions, it came together beautifully. The key is getting those onions caramelized; it takes a lot longer than 15 minutes too.

    The recipe was easy to follow and it came out amazing :) The only difference was that I used 0% Liberté Greek yogurt, brined leg and thighs with bone, and I let it simmer for an hour after the last step :) The meat was literally sliding off the bone when I ate it with lightly toasted whole wheat tortillas :) I used no salt other than the brining step :) Thank you Vijaya :)

    I made this for my parents a while back, adding some sauteed poblano peppers for some additional vegetables. They recently told me they enjoyed it so much, they have gotten korma at every Indian restaurant around town, and none of them are anywhere near as wholesome and flavorful as this recipe.     Just made this, and it was the most satisfying Korma i've ever made. It's extremely luxurious but not at all heavy, it's quite tangy from the yogurt but the caramelized onions mellow it.

    In Hawaii there aren't many good indian food restaurants but I have a favorite in the city... unfortunately we don't get out to the city often so I only get to eat it once or twice a year. I've been searching for a proper korma recipe like what they offer but have never been able to duplicate it. I knew that geography was the main difference with the recipes I was trying and the one I actually wanted but I had no clue what part the family that owns the restaurant is from (they're first generation immigrants and a very tiny family run restaurant so it was his mothers recipe and he absolutely would not give me any hints). This blows it out of the water! This is the exact flavor i was looking for and i believe i can add the veg that they use pretty easily (i usually get it with eggplant). Thank you thank you thank you! This taste fabulous and its easy to follow you through the whole video!

    Just tried this in a veganized version (soy-yoghurt + veggies instead of yoghurt+chicken) and it blew my mind! 100% recommendation. Only one thing I'd like to add: for those who are a bit heat sensitive, serve this dish with some extra yoghurt and/or chutney as it is (to my european palete at least) on the more spicy side of things.

    There’s an Indian restaurant in town that’s sooo good and this recipe tastes almost identical to their chicken korma.
    10/10 recommend this recipe.
    Imo salt really brings all the flavors out in the end.

    I made this recipe a couple weeks ago, and it is very good. My $30 blender didn't handle the low volume onion and cashew mixture very well, however. I'll use the hand/immersion blender tomorrow when I make another batch. Also I'll add more chili powder because I like it spicy. Thanks for the great recipe and awesome video, Vijaya!

    I made this without cloves and without yoghurt. I accidentally used sour cream instead of coconut cream, but it turned out tasting like a chicken korma and it was delicious.

    I keep coming back to this video. Very simple and to the point. Pleasant to watch. I have made this specific recipe about 5 times now and it delicious every time.
    I used to measure the seasoning but now I just eyeball it lol.
    Goes well with white rice. And you can eat it with naan or roti too 😋

    I made this vegan! With vegan yoghurt and vegan chicken :). I also added some carrots, thinly cut potatoes and some spinach (because love the veggies).

    Hi currently in the process of making this, waiting for that oil to separate from the yogurt 😅and I can already tell it will come out delicious thank you for this:) I wish I had the original ingredients to make this but I substituted yogurt for sour cream. And cloves I did nutmeg. And for black peppercorn I did All spice😭. But I’ll make sure to get these ingredients for next time 🧡

    I realize your version is a-tomato, but as many other chefs' korma recipes call for a tsp of tomato paste or a couple of chopped tomatoes and I had two Romas that needed using -- I added them to the blender. They helped a lot with the onion-cashew puree in terms of getting it all blended. And in the end, the whole thing was a delightful success. Kiddos ate it up until they were popping full. Thank you!

    Mam, thank you so much for this recipe. I tried it today and it taste soooooo good, MashaAllah. My daughter (5 yr old) knows what she likes and don’t like when it comes to food. She said it’s yummy and cook this for her school lunchbox. ❤️👍

    I have been trying to recreate the chicken korma recipe from my local Indian restaurant and this one comes VERY close! It tastes amazing and wasn't hard to make at all! Thank you so much for sharing this wonderful recipe. It is an absolute keeper!! A couple notes, I think whole milk full fat yogurt makes is a must. I also added some Thai chili flakes to kick the heat up a bit

    Officially subscribed! We live very rural so we don’t have a lot of culturally diverse foods available. I’m determined to learn and provide as authentic as I can manage foods for my kids and this recipe was so good and accessible! Thank you and can’t wait to try more!

    Thanks for this excellent presentation. I’m going to try it but have a question. You say to use 400 degrees oven temperature but it looks like you’re using a fan oven. As fan ovens such as Neff cook at lower temperatures using their Circotherm fan, is the 400 degrees for a fan oven or a conventional oven?

    Nice recipe! But i changed it a bit:
    Instead of the tablespoon of chili powder i used a mix of mainly smoked paprika & cayenne pepper powder and a bit of bird´s eye chili powder, i also did not add the garlic to the oil(because i dont like browned garlic and i dont think you can avoid it much if you want to cook the chicken in the oil) instead i put it into the cashew-onion paste and add it first after the chicken was a tiny bit browned on some pieces and cooked it with the chicken for like 2 minutes. I also used less oil and Greek yogurt with 10% fat and finished it with a big tablespoon of butter and a bit of heavy cream because the acid of the yoghurt was a bit to much for my taste.
    Served it with brown rice. Everybody liked it.

    Thank you for this wonderful recipe! So... I think I followed the recipe pretty much step by step... but the yogurt mix curdled when I put it into the pot with the onion/cashew paste... What did I do wrong? Perhaps too hot? Not enough water? Thanks for your help!
