  • Today is my last day in the wonderful food city that is Da Nang, Vietnam and I may have saved the best till last. We're heading out for two noodle dishes that all the locals here have told me are must eat dishes in central Vietnam. The first stop is for Mi Quang Mi Quang (Mì Quảng) which is a traditional Vietnamese noodle dish that originated in the Quang Nam province in central Vietnam. Big shout out to ‪@EllisWR‬ for the recommendation!
    Second up we're heading down a little back alley for my favourite soup in the world, Bun Bo Hue (or Bun Bo Danang?) This was really clean and delicate but my favourite version actually has to be here:

    Noodles: Mi Quang is characterized by its thick, flat rice noodles, which are typically yellow in color. These noodles give the dish its distinct texture and are an essential element of Mi Quang.
    Protein: The protein component of Mi Quang can vary and includes options like shrimp, chicken, pork, or even fish. The meat is usually marinated or seasoned with various herbs and spices, enhancing its flavor.
    Broth: Unlike some other Vietnamese noodle dishes like Pho, Mi Quang is not typically served with a large bowl of broth. Instead, it has a small amount of flavorful broth at the bottom of the bowl, just enough to moisten the noodles and add some richness to the dish.
    Vegetables and Herbs: Mi Quang is accompanied by a variety of fresh herbs and vegetables, adding both texture and freshness to the dish.     Crackers: Another unique aspect of Mi Quang is the addition of crispy rice crackers, which are typically served alongside the dish or crushed over the top. These crackers add a satisfying crunch and texture to the overall eating experience.
    Mi Quang is often served with a side of fresh lime or lemon wedges, allowing diners to adjust the acidity level to their taste preference.
    As with many traditional dishes, there can be regional variations in the preparation and ingredients used, but the essence of Mi Quang remains consistent-a flavourful, satisfying noodle dish that showcases the richness of Vietnamese cuisine.

    Bun Bo Hue at the moment has to be my favourite Vietnamese dish!
    I love that everywhere you try it, they have their own little variant to it!

    As a Quảng Nam-er, I wanna say Mì Quảng is really easy to make but at the same time it’s even easier to mess it up. But when you make it right, It’ll probably stay in your mind and heart a long long time.

    My wife and I both agree that the Vietnamese food is more our style. As much as we like Thai food, the freshness of Vietnamese food is more our style. Suits our Australian summers.

      Thai food is good, i love Tom Yum, Pad Thai and Mango Sticky Rice. But i think our Vietnamese food is way much better

    1:32 that is beef tendon that was cooked for hours so they literally turned into jelly, my favorite thing in any noodle soup.
    Next time you're in Da Nang, I would love to show you some of the food that is popular among the locals but you will never find in any tourist guide book or website.

    the best part of vietnamese food is after you eat, you don't feel heavy or it wears you down. Plus everything comes with herbs. Great video.

    You can probably guess that I loved this. When you said the other day that you had already eaten two noodle dishes, I was hoping you'd post a video with them. I'm eclectic in most of my cooking, and these two dishes are closer to what I make when I say I made pho, and they look even tastier. I just told Carol, my partner, that since she loves the meals I make with similar ingredients, she would love eating street food in Thailand and Viet Nam, and Cambodia and Laos as well. We'll see if I can convince her to make an extended bucket list visit with me.

    way to eat this in Viet way is that u dump all the vegetables in and mix mix, add the chili fish sauce and squeeze little lime in it

    Both choices were good. I would have put any dipping sauces or chilis in a separate bowl to dip my meats into as the meats are usually quite bland unless you get meat balls. Squeeze of lime/lemon is all that is usually needed if broth is good as it should always be.

    It's interesting that they didn't serve it with more veggies like thinly sliced banana blossom and curled up water spinach...or maybe it was in the handful she topped your bowl, but to me, I'd need more veggies/herbs than that. :)

    Me: Nooo don't eat the green chillies. 🌶️ They kick 🍑 🤣.
    I like bun bo, but I very rarely eat it. Once you find a good spot its hard to eat anything less than. Dipping banh mi op la in it is a winner for me.
