The Vietnamese are very resourceful and creative. I saw it when I lived and worked in VN. We're talking about typical family utilizing plastic containers, chopsticks, wires, etc. as tools to do household chores. No difference in their cooking, they use so much of nature's best in vegetables, herbs, etc. in their cooking. Their using condensed milk blew me away as well. Gary, you've seen them use small rotating desk fans to flame their cooking coals, large scissors to cut meat quickly, etc.
You were so lucky to meet that Com Tâm lady . She let you discover all her recipe secrets . That shows how the Vietnamese people are so nice and not secretive at all , ready to share their secret with a perfect stranger
Thanks Gary! I quite enjoyed the history of the broken rice you added in. I love seeing the owners of these restaurants in there getting involved with the food. You know you're going to get a meal that someone had put thought and care in to it.
Brilliant video Gary!! loved seeing the process and the ingredients from their raw state to that amazing plate. You're making Vietnam very hard not to put on my foodie bucket list buddy!
Random comment but just back from bangkok first time. I seriously now have such a huge appreciation for your channel. Your content and depth of experiencing Thai food and culture is awesome. Your really good at what your do. Keep going brother 🙏🙌
Great vlog sir, very informative and great to see the breakdown and build up of the dish from kitchen to table. Can see from your face that you enjoyed it. Be calling you Gary Boudain next😂😂
Greeting from Hanoi buddy. Have a nice weekend. The sweet potato you ate is Indian taro, it almost has no taste but so soft in texture, and mitigate the sweet of sugar.
Thanks Nic, glad you enjoyed it! Yes they are. In fact, I found out that we turn our oranges orange in the west because no one would buy a green orange apparently 🤯
Ahhhh Brother, I love seeing behind the scenes. I can taste the meal now. I know it must be harder to get this content but its worth it. Did they make you sign a Non Disclosure Agreement for the detailed recipe lol. Fantastic!
I’ve heard of milk or buttermilk in marinades to break down and make meat fibres tender, but never condensed milk. I alway eat it out of the can when I make rum balls 😂😂 the food looks fabulous ! Never had broken rice before
Not yet, been a little busy on the weekends, also going down to quy nhon tommorow 🤣. I will probably get chance next weekend, will tell you my thoughts
Nước mắm = fish sauce. nước chấm = dipping sauce. nước sốt = sauces... the first one is Vietnamese, the second one is Chinese influenced, the third one is French/English loan word..... The first 2 use simultaneously unless it's something else other than fish sauce, like soy, peanut, mayo ..... No need to explain the last one, it's pretty much use the same as in English nước lèo = broth, . nước canh = vegetable soup. nước súp = soup broth ...miscelaneous types Again first one is Vietnamese, second one is Chinese influenced, third one is French/English loan word
I always still think of Vietnamese food as bland compared with Thai, but this just showed me that I know very little about the variety and wealth of flavors available. That com tam was clearly not only a hearty comfort food, but also as spicy and flavorful as anyone could wish; I could see me enjoying that after a day of heavy physical labor of the kinds I did for a lot of my working life. And the sweet potato and coconut dessert would be a fine counterpoint. I used to get something like that in my favorite Thai restaurant in NYC, but I'm guessing it didn't sell well to the locals, so it went the way of the fish cakes and fish stomachs over the years. And now, sadly, that family owned and run restaurant is gone too, possibly due to Covid and also to gentrification.
I doubt that the Vietnamese food you had in NYC was authentic. Plus, Viet food is all about the sauce. Each dish has its own sauce. Whether it's dipping sauce or fish sauce or any sauce. If you don't use the sauce, it'll turn out pretty bland.
@@QuanNguyen-og6pq I'm sure. Most of any food prepared for customers in the US is bland beyond belief, and with little nutritional value or real enjoyment. I make my own take on Vietnamese and Thai and Lao food at home, and its usually better than what I could get in local establishments, even if its not exactly authentic. I have all the sauces and spices necessary, but fresh produce, meats and seafood that would fit the bill are few and far away.
If I come back as a pig, a chicken, a duck, prawn or a fish in my next life form and get eaten, I'd want to come back as those animals in Vietnam. At least some talented Vietnamese cook will make me into something delicious and appreciated by humans and not some crappy frozen tasteless meat patty served in a franchise restaurant in the West.
I just admire how incredibly friendly vietnamese people have been, not just in videos, but in real life. Great video, wish I could smell it sometimes, really. :P Hungry as hell, going to make myself a german Schnitzel with Pommes to quickly quench my hunger.

Yeah those fans are so cool, they also use them in Thailand on the grilled meat stalls

Yes she was very open and friendly like everyone I met there 🇻🇳
I use condensed milk to marinate pork chops at home too. It helps lock in the moisture and keep the meet tender.
I’ve never thought of it before this!
Good pronunciation of com tam & nuoc mam 👍
Thanks mate, I’m glad I got something right 😅
Not only was the food and drink was great, the owners were super nice too❤👍. Well done Gary, this was worth the trip to Da Nang despite the rain.🌧
Thanks mate, definitely worth the trip just for the food! 😀
Thank you for another nice food review. I really like this Com Tâm.
Thanks for watching 😀

The documentation of all those techniques this restaurant has is simply gold! Me amazed! Thank you, Gary👍🏼

It’s an underrated place for sure
Loved the behind the curtain stuff duchess - good on her for letting you in! Seems like a cracking dish
Unreal access mate. Only on TRC TV
Extraordinary behind the scenes look at how com tam is made. Are the oranges green in Vietnam? Thanks mate
Thanks Nic, glad you enjoyed it! Yes they are. In fact, I found out that we turn our oranges orange in the west because no one would buy a green orange apparently 🤯
The world to big to learn..😊

Yes for sure Willie. I’m in the middle of discovering it for myself which is a lot of fun! Sorry to hear about your local restaurant!
You should try Vietnamese food to discover how delicious it is . Vietnamese cuisine has nothing to envy any other SEA cuisines

Do they soak Moo Ping in condensed milk ?
No but some people brush them with coconut milk
Da Nang will be on next trip to Vietnam, just staying in Ho Chi Mihn this trip for first time. Bangkok in 2 days, I will kiss the tarmac LOL
I love Saigon so much but did enjoy Da Nang. Welcome to Bangkok!
@@theroamingcook Thanks mate
@@theroamingcook Welcome back to Bangkok, last here in 15
Trying to be on a diet while watching these videos is taxing on my soul 😅.
Hahahahha, I’m with you!
Looks good minus the pork rind, but wasn't it cold by they time you got it all chopped up and mixed?
Don’t like pork rind?
@@theroamingcook shocking hey 🤣

The Meal of Gods!!
You know it mate!
Is that US$2.50? It's AU$15 at my local resturant in Sydney. So yummy 🥰
Madness right? 😅
Hi Gary
Are there any Shan / Burmese restaurants in Bangkok you can show the world ?
Hey Leonard! There are some I want to cover very soon yes! Is there any dishes you’d like to see?
@@theroamingcook . Mohinga . It’s an acquired taste , due to the fish stock / broth 👍🏽
That’s an easy find here so consider it done 😀
@@theroamingcook . Thank you 😊
Just hit me, who you remind me of. It's Matt Goss🙌
55555 I’ll take it
Damn, I missed a log ,how did I do that, haha cool food with scissors
It's easily done!
Where is a good place to stay/hotel?
There is the beach where we stayed or you could stay near the river
Show me the address of this place please. Thank you and enjoy the rest of your foods trip Review.
It’s in the description 👌
In VN people create all kind of fish sauce😅

Haha 100 percent agree
Interested to know who rated this place number one in Vietnam?
You didn’t watch the video then?
Món tráng miệng là khoai môn nha, không phải khoai lang.
The purple one must have been sweet potato/Ube though? I can’t believe I didn’t get that the white was taro, I eat it all the time in Thailand 😅
The portion is small, isn't it?
Filled me up
Hi Mr..❤❤
are you very very Handsome❤

You forgot the bowl of broth soup , you was wrong eating man!
Next time I’ll show it on camera! The soup was delicious!
Cheaters defrauding food and fee plus 10% tax, we booked hotel got cheated. No way go to Danung again.
I don’t think you can blame the restaurant for that 🤔
admin, no mixing pork with rice. Look at terrible.
Ok
