    CORRECTION! Thankfully someone caught this, and I needed to make the correction - the reprocessing time is still 75 minutes, not 65 minutes. I was looking at the bone-in time, not the boneless -so please make note of that!!! This is why it is ALWAYS best to use YT videos as a means of inspiration and visual learning - but ALWAYS double-check canning info with the NCHFP's website or your book. ALWAYS!

      Why? Wouldn't chicken still be safe at 60 min for both pts and qts? I think they could.

      If it has meat of any kind I usually let them process at least for 90. Can never be too safe

    It doesn’t matter how long you’ve been canning, sooner or later, mistakes will be made, especially while multitasking, phone calls, family needs, etc. Love your honesty and the fact you didn’t cover the goof up and allowed this to be a learning experience. Also, this will help newbies feel better about their learning curve. 😉

      Yes that's so important. I just started Pressur canning and I was so frustrated because the first 4 tries where fails.... It took me quit some time to figure out what went wrong.... And when you only see the perfect filld endresults from others you get sad..
      So thank you for being honest.

    I’m almost 71 y/o and I’m a new canner. Wish I’d started years ago, but I wouldn’t have had this wonderful community to learn from and be encouraged by.would there been a cause to de-bubble, since from camera angle there were air pockets?

      No need to debubble raw pack meats. The meat will settle during processing and give off its own broth to fill airpockets. Any meat above the broth may become discolored, it is still safe to eat. 🙂

    Thank you for owning your mistake and then showing us how to turn a mistake into a success! I love my canned chicken and have never had a failure but I am adding your information to the notes in my canning file so I can be prepared for any missteps in the future. (And you are right, there is no such thing as "ugly chicken" - this stuff is amazing.)

    Oh my goodness, thank you so much for this! Thank you for showing us not only that even a seasons canner with a check it twice checklist can forget something, but also what to do if we have that experience. I will be pressure canning this weekend for the first time, and this gave me some extra encouragement! Nobody wants to fail, but it is so nice knowing that you can turn around and save it!

    Love ❤️ my “ugly” chicken! Favorite recipe is to layer in a casserole dish with rinsed home canned potatoes on the bottom, chicken , herb of choice, top with cheese and bake till bubbly.

    I've always said and believe everything happens for a reason and this.missed step allowed this to be a very informative learning lesson and the proper ways to fix it.     The MOST important thing of canning, to me…..is a somewhat sterile place (surfaces super clean, jars washed and hot depending on what you’re canning, and everyone outa my way why I do my thang😂) Follow your canner to a T, then you have no worries. I haven’t killed anyone yet:) Thanks for a great tutorial.

    I forget to de-bubble sometimes even with the de-bubbler sitting on the towel next to the jars. It's very easy to miss a step when you're excited about a new recipe.

    How funny! I’m canning chicken right now. I precooked my “ chunks” and got 11 pints canning now….I love doing this. And yep, some fail, but I reprocess or eat for dinner. Btw….I love your video’s, your content is fantastic. I also just finished dehydrating 4 packages of veggies too. Their sitting on my counter now for conditioning…..because of you..❤️

    You really brought back memories of my experience canning chicken. It wasn’t that long ago and was also my first time using a pressure canner. There were so many steps to learn and I was petrified. I owned my pressure canner several months before I 3got the courage to use it. Then I wasn’t sure I did it right and thought I was going to poison myself. Your video was spot on. Wish I had seen your video first. Awesome job.

    I lost 5 jars in my last canning session... it hurt. I could see that it was the fat in the jars that caused my issue. I will be more careful next time. Thanks for sharing real life canning problems.

    I'm glad you owned up to making your mistake. This shows new canners that everyone can make mistakes, and something doesn't seal.
    But showing how to correct your mistake is also helpful.
    Chicken salad, chicken tacos, and chicken pot pies are my favorites.

    Thank you for leaving in the mistake because we all occasionally do a 'boo-boo' while canning, I knew immediately that you'd forgotten to wipe the rims but a lot of new canners might not catch it, and this way they can see what can go wrong when you fail to do that. I've made costly mistakes in my canning over the years so I appreciate and understand how hard this is to actually admit that things happen even to a seasoned canner.

    Thank you for always being so honest with us Darcy and showing us things to watch out for. I've only pressured canned once so far, and it was 4 jars of ugly chicken. I know it's silly but I'm afraid to eat it, what if I did it wrong! LOL

    I find great value in you posting your "failure". Such a great reminder to be extra vigilant every time we can. It was also a great opportunity to teach us what to do if we get failed seals. It is refreshing to see that others forget steps as well or that things do not always go as planned!

    My first canning project, was almost a fail too! I had just gotten a brand new All American 931 and my first project was canning pork but after watching Suttons days video. But since it was a new canner my first time using it, it didn’t quite seal and so it never came up to pressure. I ran it and ran it but it never jiggled it was over 75 minutes and it never jiggled. So I turned it off and let it come down to room temperature…. The seals sealed, but I wasn’t sure if it had been in the save zone or how long it had been there. So I froze the meat after it was cool. The next few times I use the canner I was able to get it to the right pressure, so now I am up and running. I thank you though for showing this video, so that we all can learn what to do when things don’t go perfectly. I think I will set my little container of vinegar over my jar lids, so that I can remember to wipe the rims.
