Great point! I'll throw them in dry for shorter cooks to get that flavour in, but I've heard that steam helps smoke 'stick' and will incorporate water into longer cooks. Some people suggest water trays for things like ribs and briskets, and I've even heard of people hosing down their meat with a spray bottle like a misbehaving cat to help with smoke penetration. I don't think I would ever go that far, though. 😄
Pretty work. Lousy smoker. A proud parent can gush "My son built it in shop class!" Can smoke 3 times the food on a $60 Brinkman and not spend a dime on cedar, screws or stain. Oh well... Guess you tried.
