How I make mine is different. I like to use bbq sauce, cut it down with whiskey, crushed red pepper flakes. Next I put the marinade and meat in bag and seal it for 12 hours. Then I set my smoker at 180 degrees F in smoke mode with oak and cherry mixed. My smoker I am using is the Smokin Tex Commercial BBQ Electric Smoker 1500-C with the seafood grids and the jerky dryer attachment. I am using wood chunks for it. The way I slice the meat is the same maybe slightly thinner.
