A lot of people try it as if it were meant to be drunk black, like a lot of other coffees, but coffee and chicory New Orleans style is specifically made to be taken with milk.

I have been chicory coffee as long as I can remember even as a kid. Many of my relatives are from the Louisiana area, and our father made it for us as we were growing up. I now share it's wonderful taste with my wife, and we only drink Chicory coffee, or Chicory Cafe Au Lait nothing else appeals to us. I use Cafe Du Monde because I can purchase it at a store near where I live for cheaper then I can find it online. $5.99 for a 15oz can.
I made a batch of cold brew with chicory (a la Blue Bottle) to try and simulate New Orleans iced coffee or vietnamese coffee. I added some condensed milk for sweetness and dairy. The chicory flavor was a bit light, so I might try to up it next time.
P.s. The best applications for chicory to my taste buds thus far are still French Press with a chicory/coffee ratio of 1:8 approx, or as cold brew with a 1:6 ratio respectively. A local cafe does a chicory simple syrup instead of brewing the coffee with the root, which is fine, but it precludes the option of chicory flavor if you want less/no sugar in your cup. Still, "Keep Calm and Chicory On!", as the denizens of NOLA might say?

I know it's probably not to popular in the northern states but down here in the south it's good on the grill roasted or in stews and promotes healthy liver gallbladder and digestive tract. Plenty of vegan recipes available online for anyone interested.
I think you missed the point . The Chicory is added to the coffee to absorb the bitter oils that is inherent in coffee. Thus, Strong coffee but not bitter coffee.
Hey Gail! I love all the videos! I have a coffee collaboration idea that i just tried this morning. I chopped up/tore up a couple fresh mint leaves and put it in a french press (probably would work better in an aeropress) with my grounds and just brewed normally. I got mint notes!
Try making a Creole Irish coffee, same proportions of coffee to chicory, add brown sugar, heavy cream and Jameson (accept no substitues) Irish whiskey. Yuuummmmm! And yes, iced chicory/coffee is delightful in its own right. Love from Arkansas!
Chicory also heals stomach ulcers and reduces acidity. It was used in the whole Europe during the war. For best results it should be boiled for 15 minutes.

There is also a coffee from hong kong called yuanyang. You combine one part coffee and one part black tea an put some milk in it and if you want you can put sugar in it and then put some ice in it.
In my experience of drinking Chicory coffee isn't not bad as normal coffee, and I already baught some Chicory grounded coffee. Sometime I do need to stop coffee from coffee adicttion, and I drink this coffee when I don't need lots of caffain. I hop this opinion woule be help for who need to reducing some caffain.
Mike C just a FYI you can find a cheap 3 dollar Melitta pour over funnel at most grocery stores, works great and is by far the cheapest way to get into good coffee (it offers lot of control)

Hey Gail! I got a new recipe for you to try out! I call it Sylvia. It's an espresso with blueberry and raspberries. It's pretty good! First cover the bottom of the espresso cup and heat up the berries. Then put a bit of brown sugar in top and then pull the espresso shot in the cup and enjoy. Good luck :)
One possibility would be to offset the faster flow rate of the water due to the larger than optimal grind size of the chicory. Slightly hotter H2O gives better extraction results when the water moves that much quicker. Also, Chicory is a root, not a seed, and can be denser even after roasting. Higher temps mean better extraction of its flavor compounds. I've brewed chicory and coffee a few ways over the years, and typically choose to use French Press or Cold Brew for consistently better results imho. But Pour Over is possible too with some tweaking, as seen here.

It would've been much better to show the mixing of Chicory with Coffee before the camera for the viewers to see -- and please, let the milk alone, everyone know how to heat up milk; the emphasis of this presentation should have been on how to make a mix of Chicory with Coffee, i.e. the actual mixing of the ingredients and brewing of the mix.
Chicory is a weed that grows on the side of the road in the south. It adds a bitter taste to the coffee and in large quantities can cause blindness. Chicory was added to literally stretch the coffee further when they were out of coffee. There’s a reason why this isn’t down everywhere as the taste is almost unbearable and tends to weaken the coffee.
I've never liked ANYTHING in my coffee... no milk or sweetner. That would change the taste of the coffee and not even a BEAR could get between me and my plain hot black coffee. When I think about cold coffee, I grit my teeth and shudder. Cold coffee is worse than curse words.
It is about the best entry steel conical burr grinder you can get and it's really easy to clean. Probably makes these videos quicker to film and such during bloopers and redos.
Chicory? That used to be added to cheap instant coffee to bulk it up, I have not seen Chicory in coffee for years about from Camp which is more of a coffee essence for cooking. i do not want to go back to those days.

Did you run the chicory through your regular coffee grinder or do it separately in an herb/spice grinder?

One question since you are using dark roasted coffee(don't know exact roast level) why do you use 205°F water ?
One possibility would be to offset the faster flow rate of the water due to the larger than optimal grind size of the chicory. You can make coffee out of green coffee beans. You just make it like you would with normal coffee beans.

Chicory has a sweetness to it, its not good if you like unsweet coffee.
