Personally if you wanna make goku potentially unbeatable in a fisical fight you just have to give him the wolverine's abilities and the adamantium skeleton you don't even need a character like doomsday, he would instantly heal from every typical mortal injury making him more and more powerful in a short time and even without using his ki it would be extremely difficult to kill him + he can even use the ki to makes the adamantium claws even more dangerous (the adamantium claws can cut even hulk's skin or pierce thor but with the ki making the claws even more efficient? This fusion would be a nightmare of a character for everyone) + it would have a crazy stamina and even if it would be way better a fusion like this with vegeta and wolverine, goku x wolverine would be amazing in any case
Now imagine if ALL 6th and 7th universe Saiyans had DC Doomsday's adaptability. They'd all be a truly unstoppable force of nature. Of course, Doomsday's resurrection ability will have to be excluded.
What if Vegeta had the additional abilities of Sunshine (Powers and Abilities of Escanor)? I think it would definitely be an interesting story, especially since Vegeta himself could be a Sin of Pride

I feel like people don't understand what Doomsday's 'adaptability' actually is. He's basically a clone some crazy scientist kept sending to die before modifying the next clone to be resistant to that. If you remove the cloning, he just stays dead and doesn't change.
Goku wouldn't use it as Goku likes to use his own training to get power and win, not using zenkai boosts to win. It would be an ability which he would rarely use

Well, what's the problem? It's an alternative story anyway, and it doesn't have to go the way it did in canon. Not to mention that it would be much more interesting. Plus, Goku could have easily gone to Hint just to get the dragon balls back, but according to your plot, Goku met Kami in the afterlife anyway, so it would have been entirely possible to create a similar arc to the original.

And according to my variation Freiza came to Earth directly after learning someone/some-species killed the saiyans So no one gets to Namek to be revived so Namek is left peaceful, all I meant was Freiza invades Earth rather than go to Namek then. So either Freiza manages to kill Goku (unlikely) or Freiza gets beat up on then blows up the Planet and is killed by Doomsday Goku in the vacuum of space. Another happier ending is that Krillen dies then Goku gets such a tremendous rage boost he kills Freiza then eventually has to fight a much stronger Doomsday infused Cell who bodies and ends Goku along with everyone in the universe until either Beerus wakes up or Zeno erases the Universe
