    Agar (Kanten) can be used to firm up the cheesecake but read the directions on the package first :) Chef recommends using the gelatin since it will give the cheesecake a smooth and light texture.

    You can double the amount of the ingredients for an 8 inch pan. Chef used 15cm (6 inch) pan in the video :)

    You can substitute yogurt with more cream cheese. We originally used yogurt to make the dish healthier, but it's not necessary :)

    You can use a blender to make the powdered cracker. Chef used the blender to mix the filling so maybe she wanted to avoid cleaning it twice :)

    I tried this today! In an effort to make this even lower in calories, sugar and fat, I substituted skim milk for the heavy cream, half-fat butter for regular butter and used skim milk yogurt, low fat cream cheese and 30g of sugar + sweetener, but it still came out beautifully creamy. Although it was already firm after about an hour in the fridge, I had to chill it overnight to get rid of any lingering tofu aftertaste. This cake is a good alternative to regular cheesecake, especially if you're short on time or just not in the mood to make a large baking effort.

    Chef actually tried the cheesecake without removing the excess moisture from the firm tofu. It was successful but the cheesecake will be firmer if you remove the moisture with a paper towel. :)

    Delicious!!! Made it today, I did it in a small bowl and did not use the graham cracker base, topped it with blue berries and strawberry. Turns out better than I though! Simple and quick. Love it!

    You can use strawberry or cherry flavored gelatin to make the cheesecake :) Sounds delicious!

    I think agar powder can firm up the cheesecake but the texture will be totally different from the one with gelatin. Usage of agar powder will also require a different procedure so please check the directions on the package :)

    You can use a food processor instead of the blender. If you hand mix the tofu, it will be difficult to get a smooth texture :)

    If you are a tofu addict ;), increase the amount of FIRM tofu by half. Wrap the tofu with a paper towel, place a weight on top and let it sit for a while to remove the excess water thoroughly. You should also increase the gelatin a tiny bit. If the cheesecake is not sweet enough, you can drizzle on fruit sauce :)

    This is like my dream dessert oh wow. I love tofu, the silkiness, the texture, the coolness, and how light it is. Cheesecake I know is delicious, rich and thick, but soo bad for you. The tofu will definitely cut through and help with that! I would actually like to add more tofu so the filling is lighter.

    Remove the excess water thoroughly from soft tofu otherwise the cheesecake will be too soft :)

    I tried this cheesecake a few days ago and I have to say that it was fantastic and so easy to make. My family were so surprised to find there was tofu in it but everyone agreed that they couldn't taste the tofu. Everyone loved it so I think it's a new family favorite. I also found that if you don't have time or energy for the crust, you can also make the filling and put it into a pudding dish (I used green tea cups) and just serve the filling like pudding and it is also fantastic.

    Firm tofu (momen tofu) is used for this recipe. Soft tofu (kinu tofu) contains more water than firm tofu so you might want to remove the moisture thoroughly. You can wrap the tofu with a paper towel and leave it for a while to remove the extra water. Otherwise, the cheesecake might become a bit runny. 木綿豆腐を使いました。絹豆腐(ソフト)は水分を多く含んでいるのでキッチンペーパー等で包んで良く水気を取り除いたほうが良いと思います。そうしないとチーズケーキがゆるくなってしまうかもしれません。

    this recipe looks great! there were lots of bubbles which might make a regular cheese cake crack but not this cheese cake! i'm also glad it doesn't need to be baked. this recipe seems much quicker to make and easier!

    This cheesecake will not firm up without the gelatin powder. You can use agar powder (made from seaweed) to firm up but it may require a different procedure. You should read the directions on the package of the agar product. The texture of the cheesecake with agar is also different from the one with the gelatin. Chef recommend using the gelatin if possible because it will give a smooth and light texture to the cheesecake. :)

      First, add 1kg of sugar, substitute half with brown sugar in an attempt to seem healthier, next add three whole blocks of butter. Then a small teaspoon of cocoa powder before covering the cake with 5 lbs of cheese.

    Tofu contains a fair amount of water and it might be the reason for the runny cheesecake. You can wrap the tofu with a paper towel and let it sit for a while to remove the excess moisture. Thank you for trying it out! :)

    Putting the cake pan on the can is so smart! I always had trouble removing the bottom until I got one of those ones with the clasp.

    I made this yesterday using 2 recipes. In less than 12 hours, only less than half of the cake is left. It tasted really good! Not a slight hint of the tofu at all!

    Compared to regular rare cheesecake in Japan, the amount of cream cheese is halved and the whipping cream is reduced to a quarter :)

    Yes, you can use silken tofu, but be sure to drain the water before using otherwise you will end up with very wet cheesecake! :)

    I just made this and it tasted so good. I'm not sure if my measurements were off but it tasted more like tofu than cheese. But...I really love tofu so I am not complaining.

    extra firm has much less moisture in it, it is best used for stir fries and for frying applications where it needs to stay whole. in this application you might be able to get away with it, but you will have to make sure it's smooth after blending. i would maybe mash it up first before adding it to the blender.

    i made this today and it tastes great!! like what others said, you can't even taste the tofu!! i put it in cupcake cases instead of cake pan though... i got 6 single serving cheesecake, don't need to cut it... thanks for the recipe, definitely a keeper! ^^

    I use digestive biscuits too. If you don't have a mixer or are too lazy to do a lot of washing up, mix Tofu and cream cheese (room temperature) in a bowl first with a spatula and then use a hand blender (with a whisk) to mix all the ingredients together. I always make cheesecake this way using equal amount of full-fat cream cheese and half-fat yoghurt.

    Some people don't use gelatin. but is is a good useful ingredient to make them stick together.
