      also former mcD's employee, we changed the vat oil every 3-6 days. Our manager was really laid back, if I recall it was supposed to be changed every other day. I could be wrong though, this was 20 years ago.

    I grate 1/2 large potato soak in salt water 10 min, drain, papertowel and squeeze out most water. Salt ,add half egg and 1 to 2 tbs flour . Stir good. Form in shape like McDonald's fry until golden brown. Makes 2 patties . Just made em. Perfect

    I finally made these earlier today! I made breakfast burritos for dinner, and did these hash browns for my potato element. They turned out great. I was a little short on the duck fat, so I used my leftover bacon grease to cover what I needed. I also seasoned the potatoes with pepper and onion powder instead of just salt. Finally, I did the prep first thing in the morning, and the potatoes were only on the fridge for a few hours rather than overnight. IF there is an advantage to putting them in the fridge over night compared to just a few hours I would like to know. Bottom line, despite my few changes they were a success!

      In a restaurant prep, you make the shredding ahead of time the shortest amount of time is 15-30 minutes, but it is recommended to give them until over night because if you season them or in the case they were dry it allows the entire batch to properly set for the following day. You definitely want to sprinkle salt on individual patties/add proportional salt to the mix before they are placed in a contain to set because salt is a flavor enhancer and generally speaking it helps push seasonings into the more denser potato variants. The salt is also how you get the really intense flavor from the crispy parts.
      By proxy the way you get the super crispy and satisfying fries is a BRINE bath, partially cook them and then freeze them over night so the residual water expands and allows an even deeper more thorough frying process. You still want to salt them afterwards too, it doesn't have to be a lot. People demonized salt along with fats and other healthy things. Fried foods are generally less healthy, but the point is to enjoy it?

      Other than when you get perfectly hot, crispy and borderline over-salted McD’s French fries the hash brown is the top tier menu item.

      When I was in Germany a number of years ago, I noticed that they put hash browns on everything: on McDonald’s burgers, on Burger King, you could even order a chicken sandwich from KFC with a hash brown on it. Strange that an adjoining country doesn’t have ‘em.

      Maybe McDonald's had them for breakfast at some point, currently they don't really offer breakfast anyway and there are also no hash browns on the greyed-out menu :p

      so, if you don't do the unnecessary confit step, lard's really just as good as duck fat, it's just cheaper. It's a different flavor profile. It's just hashbrowns, you do need to freeze the shredded potatoes so they keep their shape, though.
      I think peanut oil is also pretty tasty as a cooking oil if you're vegan or something along those lines, or if it's cheaper to get peanut oil where you live.

    I woke up on a Sunday morning to this video. I said “hey i gotta make this for breakfast” so I tore up my potatoes used literally every last drop of bacon fat I’ve been saving up, and cooked up this decadent cwispy boi. This is hands down one of the best things I’ve eaten this year. This hashy baby made my rainy nonchalant Sunday morning one for the books.

      Get lard then. You can make your own by purchasing pork fat from a butcher (even the ones at safeway/king soopers will sell it to you) or find some for incredibly cheap at your local mexican markets. They're used for refried beans and tortilla's all the time.

    Gotta eat them right away. McDonnalds Hashbrowns go from Golden Brown and Delicious to Soggy Gym Socks in the time it takes you to pick them up and drive home.
    EDIT: No doubt his are better no matter how long his sit.. he cooked them in freaking duck fat. You could fry a turd in duck fat and it would be good. I'm just saying a fresh McD Hashbrown are still good if you eat them right away.

      Yes, I'd love both the original fried, and the early 2000's baked one. The current one, while I do like it, is not my favorite. Feels like they tried too hard to make it fancy, and the crust ends up hard (because its thin, and the sugar crystals sprinkled on top)
      I think the strawberry and creme and pumpkin pie ones still use the early 2000's crust

    Actual McDonalds employee here. Those hash browns weren’t cooked long enough. When they come out they are very rigid almost ripping the bag the crust is so hard but quickly deteriorate when they cool

      Is duck fat hard to come by in the States? Duck and Goose fat is really common in Europe, I'm living in England and it's in every supermarket. France and Spain too. Its definitely worth grabbing if you see it, it makes the most perfect roast potatoes you'll ever eat 😊

      If I understand correctly: Oil used for frying doesn't go bad due to time whilst cool, it goes bad due to time whilst hot. Oil can only take so much heat before it starts to break down.

      I’ve used commercial deep fryers before, and they can get absolutely *filthy* if they aren’t drained and cleaned regularly every day. Considering this came from the sweat shop disguised as a fast food company that they call McDonald’s, I wouldn’t be surprised if they didn’t clean it out or at least changed the oil.
      For the love of god, people. Clean your fryers and change your oil after every few uses. That shit gets nasty really fast.

    Something that bothers me: he waits until he gets back to his apartment to eat whatever fast food item is being recreated. Why? Eat it when it’s hot and ready, not like 15 minutes after. Just film the reaction in the car instead of the kitchen. I dunno why but it strikes me as almost ensuring the fast food is always worse than it might be if he ate it right when he gets it.

When you bring food in a bag to a place, everyone knows that fried stuff (Fries, Nuggets, etc.) gets soggy. The bag just steams the food more than the open air. So it is a fair point. Look, I don't think that the food of any fastfood restaurant is better than his but I do agree with Kyle that as a experienced chef, Josh should know this critical point. Literally, in every cooking show in the world, it is mentioned that when you do delivery food as a restaurant, you have to think about the packaging and what kind of food you transport. In this case, the Hashbrown from McDonalds (never ever had one though, because we don't have them in Europe) is soft and soggy because it has been steaming away in the bag. Josh's hashbrown has been lying on a plate, where the steam can escape and thus it remains crunchy. Another comparison is cookies, everyone that bakes cookies knows that when you take them right out of the oven, their are still a little bit soft, however, when you let them rest, they become more crunchy as the moist in the dough evaporates....

    Totally unfair, considering when the hashbrows were in the mcdonalds bag they were steaming which caused them to get soggy, as for josh's hashbrowns had air to let the steam escape and remain crispy, totally cheating bro

      yeah i lowkey don't like these videos anymore... he's gotten really cocky, but not in a humorous way, he's just like always bragging about how much better he does it and how shitty the alternative is..
      for a competition, you need to be unbiased and he definitely isn't, same with the people testing it, like the dude with the bag on his head saying "omg you already knowwww" before he even ate the Mcdonalds one, like hunni u didn't even try it and you made up your mind?
      josh also goes out of his way to point out how he just automatically thinks its shit before he even tries it, like when he said "its so greasy" "its so soggy" before he even ate the maccas one..
      anyways its not that deep, but imo these videos aren't that good anymore.

      Agreed. His "but better" is adding wanna be fancy stuff and pretending that he's doing it so well. It's ridiculous, to be honest. Improving a product doesn't entail throwing the sink at it and hoping something good sticks, or buying expensive ingredients to "make it taste good." He clearly doesn't know what he is doing, but plays it off as if.

      Hash browns are basically just fried grated potatoes, this kind is made into a patty but the other type you just throw in the grated potatoes and they stick together and make a flat disc of shredded fried potato

      *It’s literally just improving fast food for entertainment purposes. That’s it.*
      I honestly find it much more entertaining that he makes things fancy sometimes because it’s different from the overwhelming amount of people on TH-cam who make “easy” food. If he did that, he wouldn’t have really differentiated his channel from others that much.

      Any time I make hashbrowns for breakfast--formed, loose, crispy, soft, with/without peppers & onions, doesn't matter; It's gonna take every kitchen device I own--peel potatoes, wash, shred in the Cuisinart, into water to prevent oxidation, into salad spinner to remove water, then into kitchen towel to finish the drying, onto the Blackstone griddle. numerous spatulas, knives, loads of paper towel... by the time I'm done, looks like a bomb went off. Still worth it.

    All my life I've never had a McDonald's hash brown that tasted like how Joshua described it. It has always been perfectly crunchy and savory, they always used fresh oil, and just goes so nicely with a sausage egg McMuffin. I guess McDonald's in the US is just inferior lmaoo

    Hey man! I really like your content! This "but better" series is really fun and informative.
    I would only like to say is that when you are reviewing these fastfood places food like McDonald's or something i think it will be fair to taste it right away as you take the order and not wait to go home cause then that takes a lot of time and we all know that fastfood after a while tastes bad. I'm sure your recipes are 10× better than the fastfood but it is only fair to taste it right away as you get it.
    It is fastfood for a reason
