This JALAPEÑO Harvest is PERFECT for SWEET and SPICY Cowboy Candy!!

  • Today Sarah is making one of our families favorite spicy treats! It's called Cowboy Candy and you are going to love it!
    COWBOY CANDY
    3 lbs sliced jalapeños
    2 cups apple cider vinegar
    6 cups sugar
    1/2 tsp turmeric
    1/2 celery seed
    3 tsp garlic powder
    1 tsp cayenne pepper
    Combine vinegar, sugar, and spices in a stock pot. Stir and bring to a boil. Let simmer for 5 minutes. Add jalapeño slices and let simmer for 4 minutes. Remove jalapeño slices with a slotted spoon and set aside. Bring syrup back to a boil and boil hard for 6 minutes. Ladle jalapeño slices into jars up to1/4 inch to top. Fill jar with syrup leaving 1/4 inch headspace. Remove bubbles. Wipe rims. Place new lid and ring on jar. Process in a water bath canner for 15 minutes.

    I love your harvest and canning videos. They inspire me to keep growing stuff! Ever since I heard this saying I have loved it: anyone can count the seeds in an apple but only God can count the apples in a seed. You know, gardening keeps my sense of wonder so alive. A tiny seed produces a big plant and food and lots of it. And the food includes seeds for more food! God is so smart!

    I always find your videos helpful since we just live a few hours north of you. When we can, we always heat a small pan of water to boiling, turn it off and place our new canning lids in for 5 minutes to sterilize them and prepare the rubber seal. Also, with water bath canners, we always had a rack in the bottom of the canner so the glass jars didn't sit directly on the metal bottom of the pot. The water can then circulate under the jars being processed. That said, we discovered the Back to Basics steam canner a few years back and will never go back to water bath canning. (Foods requiring pressure, of course need to be in a pressure canner.) Steam canning is much easier to set up, requires less water, and heats up the kitchen less. Glad you're enjoying the Show-Me State. We're pleased that you moved here!

      Thanks for the info in the steam canner. Never heard of it. The rules have changed recently and warming the lids is no longer necessary. I’ve also never used a rack in my canner. Never had a problem. 🤷🏻‍♀️

    Stuff peppers and bell peppers are delicious. Slice bell peppers baked on meats are good.I just 💘 them.

    My grandma would take a WHOLE chicken put it in a crockpot and put a WHOLE jar of what she called Sweet and spicy peppers. Let it cook several hours until done. Then you have sweet and spicy chicken. It also make GREAT sandwiches the next day using the left over cold chicken.

    I just started making Cowboy Candy this summer. I no longer can eat a BLT without them! I can them into 4 oz jars, pair them with cream cheese and crackers, put into basket and give them as gifts.

    The garden looks so BEAUTIFUL! My mouth was watering looking at all those yummy veggies, but I LOVE LOVE LOVE, fried green tomatoes! Yum. The cowboy candy sounds wonderful on top of cream cheese and crackers. 😋😋😋😋😋

    Your left over brine would be good mixed with a Barbecue sauce recipe and used on the BQ. Would be a wonderful way to surprise your husband. BQ sauce with a sweet kick. Definitely would be a great marinate for chicken, steak, burgers, and pork chops. Add some to sour cream and dip in the nachos or crusty bread pieces. Just a thought. Enjoy your cowboy candy.     Searching for your recipe on cowboy candy for 2 days I need to can my peppers I prayed for Gods help . He has always helped me with his wisdom. I found the recipe after watching the grower solution greenhouse install. I only have 2 days off .     We add a couple of tablespoons of the syrup to our potato salad, use the syrup to can pineapple chunks. We call it cowboy pineapple. My husbands favorite is cowboy onions. Cook onions in the syrup until soft and then can.

    TH-cam canning videos inspired me to make Cowboy Candy...first batch was such a hit! Since it only made four 1/2 pints, and because family asked me for jars, I canned a 2d batch...and doubled it! I also preserved the leftover syrup and my spouse drizzles it on everything.

    My Husband cans our Cowboy Candy. The smell chokes me up too much. I am the only person in our house that doesn't really care for it, the rest of them, eat it like crazy. You have shown me a new way to make it. I will have him watch this and try some of it your way. Who knows, I might actually start to like it then!       You could get a P95 mask that painters use for oils and aerosols. That's what I had to do because it made my lungs hurt from the coughing. Mine was under $20.00 I got mine at Harbor Freight.

    As a new gardener, I find the biggest challenges are: 1) Exactly when to harvest peas, beans, cucumbers, etc. 2) How to properly cook them. 3) How to freeze the excess for later cooking. As it is harvesting time for you, and if it is of interest, perhaps you could do some videos on those topics. Thanks!

    I love to brush the liquid on chicken then throw on the grill. The smokiness of the charcoal pairs with the heat of the jalapenos so well. When cooked, we add a few more to the top. I also like to add a few red ripe jalapenos or bell peppers to give it a little extra color and is perfect for gifting at Christmas with the red and green.

    Have made cowboy candy for about 5 years delicious!! I put it in omelets, burgers, hotdogs, delicious in tacos, any type of sandwich you can think of, marinate meats, I’ve even used the brine as a liquid in my hot pepper and cheese bread yum yum, thanks for sharing your day.

    The goats are doing GREAT and Rorie lets me hand milk her after YEARS of subbornness!! Took some work but it was worth it! 😍🐐🐐🐐🐐

    This year the first batch of pickles peppers I did I about choked to death and then had a cough for about a day and a half. I’ve been making my friends and family masks. So the next batch I wore a mask and it made a huge difference!

      I got a mask from Harbor Freight (P95) that is used for oils and aerosols. It works great. I had the same problem It was under $20.00 and so worth it.

      I feel your pain. My first year growing jalapenos I prepared and froze poppers - OMG I could hardly breath - I bought a bandana with flames and peppers just to wear for pepper projects. It helped but not as much as actual mask.

      As a former medical professional, unless a mask provides a firm seal around your nose and face it is useless against airborne viruses, you and airborne pneumonia. Also, the masks used are consider only effective for a short time as your breath create moisture and renders them ineffective. If you don't eat jalapenos regularly and become sick, they can be great for causing a immune response. I make chili with jalapenos in a five at crock and slit three habanero sinking them until they fidolve. It is usually more heat than many can handle but it helps purge you.

      @Chris B When sick with a cold or flu, it works best to eat the full strength of the peppers or make a high protein chili where you eat the fluids of the peppers. Hot enough to make you sweat, if your stomach can handle it . I have had drips of sweat literally run down from !y scalp. Allergies are a different matter than being sick. The jgetmsvof sickness can be driven out by this but a allergy is not caused by germs.

    Thank you for your true and honest channel, I am glad I found it; no drama or fake off grid, just a true honest desire to live and receive blessings of a simpler and better way of life. Although I grew up in Utah and Wyoming I now live in southeast Oklahoma. The life you have chosen is the way I grew up. My bride and I have 50 acres complete with cattle, chickens , pigs and other farm animals; we are raising the last 3 of our 10 children in this environment hoping that it carries over into their married life. We try to instill within them the love of our land and a love for the simple life. We raise gardens and preserve food for our years supply of food. No we do not have a channel we just watch, It is such a pleasure to see the love you have for how you are living. We will continue to be your fans.

    One thing I do with my onions, bell peppers and celery...I dice and flash freeze them on cookie sheets lined with parchment paper...each piece is indv. frozen and I put into gallon bags to lay flat in my freezer when done...they don't stick together and I can easily shake out the amount I want...you have a much larger garden than we do, so may be too much of an extra step to put in.. I did 18 gallon bags of diced onions...and it did take some time...but I do cook a lot with onions as well as bell pepper and celery...I am wondering if I could make an orange marmalade and add the jalapenos like the syrup and can? We would have to remove the seeds, but enjoy a bit of heat...Sarah, you are looking so great and know you are also still taking it slow...prayers for a complete heal! God Bless!

    I love this channel so much. My husband and i garden and use ALL the advice that Kevin and Sarah give. We owe our beautiful garden to them.
    So question for anyone who can answer. We got the garden ground cover that Kevin and Sarah got. How long does it typically last before it has to be replaced? Just something we were curious about. We used a hand torch to make our holes so it doesn't fray. And we are going to roll it up every fall and store it during winter.... Someone let me know. Thanks in advance.

      You should get 5 or more years out of it. We have some that is on its 3rd season now and is still in great shape! So glad it’s working as well for you as it has for us! God Bless!

      I just got mine too and I'm hopeful that this will help turn the table in my war on weeds. My question is does it have to be removed in the fall or can you just leave it out over winter?
      Also I love that you share recipes you make with your crops. It's nice to get new ideas.

      SILKS Family Farm You can leave it out, but after the first year, dirt and weed seeds will blow onto it and germinate and grow down through. Also, some will grow up through as well, especially in the holes where the pins are poked to hold it down. Also, it’s a good idea to amend the soil underneath with some kind of organic matter every year so the soil doesn’t compact too much.

    I put what is called Jezabel sauce over cream cheese, a jar of apple jelly, a jar of pineapple preserves, and a jar of apricot preserves mix and add horse radish to taste and pepper over a block of cream cheese and bam Jezebel Sauce Enjoy!! Those peppers look great!!!

    My niece's 5-year-old (starting when he was 4) loves watching the "Kevin and Sarah Channel". If he sees me watching another TH-cam channel, it never fails that he will watch for a few seconds and then say, "That's not Kevin and Sarah. Let's watch Kevin and Sarah build something." He especially loved your last chicken tractor build. Sometimes I will randomly pick another channel just to watch him tell me it's not Kevin and Sarah. When he has the remote, he knows exactly how to find "Kevin and Sarah".

    Hi Sarah, congratulations for your awesome harvest!! Dear, if you want your jalapeños to abound more, perhaps you'd like to try experiment with a twist: we usually add sliced carrots, sliced onions and garlic to our jalapeños when we can them. The vegetables absorb some of the heat and taste delicious. We stirfry all the vegetables before filling the jars. You can also add bay leaves, thyme and a little salt to the mixture. We find it delicious!

    My new favorite for cowboy candy is on grilled cheese sandwiches!!!! Also, when I sliced the peppers I had to buy a mask from Harbor Freight that is used for paint spray, ect. It's a P95 mask for solid and oil aerosols. I had problems with slicing because of the fumes and it affected my lungs for hours. I finally asked a lady in my class that makes pepper jellies professionally and she suggested the mask. It was under $20.00 and sooo worth it. Also, my original recipe calls for 2 Tablespoons of mustard seed. My peppers aren't ready yet. Still small :( Thank you for your wonderful videos.

    I love candied jalapeno. I bought a pint jar for $8.00 before I decided to make my own. Even with buying the jalapenos I can make a pint for about a dollar. I love them on cream cheese and they are great with any barbeque.

Have LOVED binging your videos on the road. Unfortunately, my dream of homesteading won't come true but I enjoy living vicariously through families like you. The Playlist are especially helpful. However, I have found some things I WILL have fun trying once we return home. I LOVE pepper jelly and my husband LOVES spicy jalapeño anything lol. Cowboy candy is a must once we get home.
