- For the premiere episode of our One Bite series, we caught up with fourth-generation Crescent City restaurateur Dook Chase of the iconic Chase family at his New Orleans eatery, Chapter IV. In this episode, Dook takes us through the making of their signature Fish & Grits, a mouthwatering dish featuring Fried Catfish, Crawfish, and Andouille Maque Choux over Creole Grits. Drawing inspiration from his grandparents' legendary restaurants, this creation adds a modern twist that makes it distinctly Chapter IV.
