Oh this looks so delicious! I needed a good Tindora recipe. Fabulous one! I love the rich color of this dish. I think I will adjust the oil to a bit less. One other thing is that the garlic always burns too dark in every dish that requires sauteeing. I will try something new. Put in the garlic, let it fry till light golden. Remove with slotted spoon and set aside. Now the oil is garlic flavored, but garlic is waiting outside, partially browned. Continue normally and halfway through the Tindora browning, add the garlic back in to the dish. Continue till the end normally. This might give the garlic just the right amount of browning. Always a tricky one that garlic, as it burns easily. For those who want the red color but not so chilly hot, add paprika and/or Annatto also called Achiote in Spanish. Its an earthy red coloring agent, all natural, used a lot in Mexican sauces and dishes. They are also a rich source of antioxidants, which are beneficial for protecting skin cells, as well as minerals like calcium, sodium, and iron. Annatto is used to improve digestion, help manage diabetes, strengthen healthy bones, and reduce signs of aging. Make sure you are not allergic to annatto, which happens in rare cases.
