Who doesn’t love adobo? Every Filipino grew up enjoying their own household’s version of adobo, while foreigners usually start with adobo as an introduction to Philippine cuisine. Here, try a version that skips the soy sauce but ends up just as (or even more) delicious than the classic. Don’t forget about the dipping sauce AND the extra, extra cups of steamed white rice. Winner! Let’s start cooking #SimpolAdobongPuti!
INGREDIENTS
1 kilo pork belly
1 teaspoon rock salt
1 head garlic, crushed
1 tablespoon crushed peppercorns
3 to 4 laurel leaves
3/4 cup Datu Puti Vinegar
1/4 cup Datu Puti Patis
1/4 cup oil
For the dipping sauce:
Datu Puti Vinegar
garlic
red chili

Matagal tagal na din ako dito sa "Middle Earth", Hehehe, kalokohang tawag namin dito sa sa middle east. Matagal na din akong hindi kumakain ng baboy. I’ve never tried adobong puti but I tried it the other day and ohmy it’s so good! I love my adobo to be sour and I finally found the perfect recipe! Thanks to you!
thank you so much for this recipee which reminded me of my lolas adobo but she just called it adobo and not adobong puti which i love so much,back then she would cook a big batch of this adobo and will store it in a container and pack the adobo into the same oil which will turn to lard when it cooled and thus preserving it.when its time to eat (usually breakfast) she would just scoop it into a hot kawali with lard and all to heat it up and even add more garlic and make the fried rice on the same kawali.

I believe adobo puti originated from Pampanga. I remember my grandma and mom made it that way.
i remember my late father noong bata pa kami.mga late 70s.nag jatay sya ng alagang baboy namin kase waka kaming ulam.malayo kase kami sa market.aadubuhin halis lahat ni papa ang kinatay na baboy except sa ulo at paa.we make a poek soup out sa paa.ang ulo binibigay sa kapitbahay.gano mag adibo papa ko.suka na pure galing talaga sa sanggutan.then asin at maraming garluc.wakang patis.puting puri ang resulta at ang tagal maubos.we will just reheat the big earthen pot(kolon)pag matolog ang mantika.i miss my father cooking.he cook better than my mother

Sa Bicol ko to natikman. Dinala ng kaibigan ko noong nagfield work kami. Pero yung version na dinala nya eh fried. Masarap sa kanin.

eto yung pinaka favorite na ulam ng family namin... pinakagusto ko dito kapag may bahaw(kaning lamig). tapos alisin mo yung mantika sa pinaglutuan at dun mo ilagay ang bahaw (yun na mismo gawin mong plato hahaha)...super sarap nung mga naiwang tutong na adobo at bawang....

Adobo sa puti... Kahit hindi i ref ng dalawang buwan, hindi parin sira.
Ilocos adobo is also without soy sauce. Rock salt is used.

After more than a decade of watching cooking adobo in TH-cam, someone finally did my favorite type of adobo. 👍👏👏👏But question: I never put Patis but you did. What is the difference with patis? I am asking because family avoids patis as ingredient.
Samin sa Pampanga Adobong puti din pero toyo pa din gamit. We only put 1-2 tablespoons of TOYO.

You can use salt instead.. it’s just that soy sauce makes it darker while patis or salt , lighter in color. Hope this helps 👍🏼

I grew up with adobo,that was cooked similar except for the oil. My mother didn’t use any oil. But, looks delicious.

Adobong puti ng lola ko walang patis.. Suka, garlic, bay leaves, pepper corn, salt lng tpos gamit nya either pork or chicken na naka cube ng maliliit pgka cut. Medyo may sabaw. Sobrang sarap. 😁

There is no exact measurement in cooking kasi tinitikman mo unlike in baking you must have the exact measurement
Depende yan sa panlasa ng nagluluto. Napaka spoonfed naman ng gusto mo. Ano ka, grade 1?
