You don't even have to gisa the sibuyas and the bawang. Just put all the ingredients together at the same time,excluding suka of course, coz it will make the karne hard. add water so as to make the karne tender and when you think yhe karne is tender enough then put the suka,and a little bit of asukal, cook it for a couple more mins. Make tikim and it's on your own discretion if needs to add more toyo, or suka, or asukal.
I like this version. Uncomplicated technique, the pork is not overpowered by too much ingredients. The sauce should compliment the star of the dish, not overpower it. Thanks for sharing.

(Parsley, Lemon, and Habanero) He even seared the Chicken without sauteeing it with the aromatics. Lemme ask you, if you cook Adobong Puti do you still call it Adobong Puti if you use Soy Sauce? Of course not right? It's more than just a dish, Adobo is a method of cooking and preserving meat that predates the use of soy sauce in Filipino cuisine, although it was influenced by Chinese cuisine.
I couldn't understand much or what he said because I only speak konti tagalog, so thank you for showing the ingredients in English. Personally, I prefer pork without all the fat and I like to add potatoes, carrots and peas. I've never added sugar or patis, but I'm going to give that a try.
Your tip on not stirring the vinegar is a secret that most cooks doesnt know. A lot of adobo recipe or other vinegar based recipe failed because stirring vinegar before simmering always leave it a flat baking soda like after-taste. One additional tip i would say is NOT to cover the pot immediately after adding the vinegar to let the vinegar release its rancid after-taste steam out of the pot, let it simmer a little bit before covering the pot with its lid.
I continue to reduce and then add water and reduce and then add water to the sauce because I find that the longer cook time removes the overly sour and acidic taste of the vinegar.
The original adobo uses only garlic like this recipe. Now, there are plenty of versions all over the country. But the best adobo is the recipe of your mom!

No , the right way is to put everything ( i mean EVERYTHING) in the pot let it boil, dont stir, then simmer then its time to stir and let it simmer until the sauce thickens . Yon ang kinagisnan Kong adobo . Walang gisa gisa , walang babad babad.pwede mong damihan ng sibuyas bombay ( shallots) bago lumapot ang sauce.

I cook adobo but I don’t measure the ingredients. I do the same way as my grandmother taught me, eyeballing all the ingredients that I put in and I never disappoint.

Your tip on not stirring the vinegar is a secret that most cooks doesnt know. A lot of adobo recipe or other vinegar based recipe failed because stirring vinegar before simmering always leave it a flat baking soda like after-taste. One additional tip i would say is NOT to cover the pot immediately after adding the vinegar to let the vinegar release its rancid after-taste steam out of the pot, let it simmer a little bit before covering the pot with its lid.

This ain't true unless you are using unrefined vinegar. This is an accurate advice probably 20 years ago.
I continue to reduce and then add water and reduce and then add water to the sauce because I find that the longer cook time removes the overly sour and acidic taste of the vinegar.

No , the right way is to put everything ( i mean EVERYTHING) in the pot let it boil, dont stir, then simmer then its time to stir and let it simmer until the sauce thickens . Yon ang kinagisnan Kong adobo . Walang gisa gisa , walang babad babad.pwede mong damihan ng sibuyas bombay ( shallots) bago lumapot ang sauce.

I cook adobo but I don’t measure the ingredients. I do the same way as my grandmother taught me, eyeballing all the ingredients that I put in and I never disappoint.

Dto lng ako natuto mag luto sa yt university 😂😂😂 try ko yan sir oag uwi ko sa marso. Sa amin ksi yung una mong proseso na pina brown muna ang liempo yun na yun masarap yun. Tubig lng yun bawang na may balat pamentang buo at dahon ska patuyoin at haluin ng haluin hanggang lumabas ang mantika ang mag brown na ang katne.
