Sushi Masterclass - Maki, Uramaki and Donut Step-by-Step Guide to Make PERFECT Restaurant-Like Sushi

  • Welcome to my channel. This is my first ever MASTERCLASS. If you watch this video and follow the steps precisely, I promise you will make the most perfect sushi. It is packed with flavours and is so soo good. If you’re a sushi lover & don’t want to splurge in restaurants, you got to try this.

    So let’s begin 🫶🏼
    All you need is -
    To prepare the rice-
    • 1 cup Japanese short grain rice
    • 1 cup + 1.5 tbsp water
    • Butterfly pea flower, as required for the blue colour
    Sushi seasoning vinegar -
    2 tbsp Unseasoned rice vinegar
    2 tsp Sugar
    ½ tsp Salt
    For the veggies-
    • Sliced red, yellow and green bell peppers
    • Sliced cucumber
    • Sliced carrots
    • Pickled carrots
    • Pickled purple cabbage
    • Sliced avocado
    For tempura-
    • Tempura flour
    • Asparagus
    • Cold water
    • Oil, for frying
    Others-
    • Sushi mat
    • Nori sheet
    • Cream cheese
    • Spicy Mayo (mayo+ sriracha sauce)
    • Guacamole
    • Sliced mango
    • Thinly sliced Cucumber
    • Edible flowers
    • Wasabi
    • Pickled Ginger
    • Microgreens
    • Tamari/ Japanese soy sauce
    • Togarashi Seasoning
    • Pink radish
    Method -
    1. Rinse the rice 3 to 4 times until the water is clear. Once the water is clear, soak the rice in fresh water for 20 to 30 minutes.
    2. Post this, drain well so that there is no excess water.
    3. Stir the rice and water together in a sauce pan & then cover with a lid. Turn on the heat to medium high and cook until the water starts simmering.
    4. Once the water is simmering, reduce the heat to low and let this cook for 15 minutes. After 15 minutes, all the water will be absorbed. Remove the pan from the heat and let the pan be covered for an additional 10 minutes before you remove the lid.
    5. While the rice is cooking, prepare the seasoning vinegar - Basically all you need to do is mix all the 3 ingredients and keep aside. Make sure the sugar melts.
    6. Once the rice is cooked, transfer to a large mixing bowl & drizzle the seasoning vinegar evenly on it. Gently fold the rice with the vinegar and make sure you are not breaking the grains, be gentle.
    7. Keep the rice covered to prevent it from drying. Use the rice only once it has cooled completely.
    8. You can create a blue rice using butterfly pea tea flowers, first steep the flowers in water, strain it and then cool that water down & use it. Simply soak the rice in this water for 30 mins and proceed to cook like the plain rice.
    9. For the crunchy tempura, mix together tempura flour and ice cold water as required to make a buttermilk-like batter.
    10. Heat oil in a kadhai to super hot and sprinkle the batter into the hot oil.
    11. Deep fry until golden brown, remove and transfer to a kitchen paper.
    12. For the vegetable tempura, mix a little tempura flour to the prepared batter and thicken it slightly.
    13. Remove the bottom fibrous part of the asparagus and use the rest. Cut them into desired size, dip into the batter and deep fry in hot oil until golden brown and crisp.
    14. Remove and transfer to a kitchen paper. Set aside.
    15. To prepare the sushi mat, cover it with cling film as shown. This will prevent the sushi from sticking to the bamboo sticks.
    16. To assemble an uramaki sushi, place half Nori sheet onto the sushi mat with the rough side up and spread some rice evenly over the Nori with wet hands. Be gentle and cover the Nori completely.
    17. Turn the sheet upside down so that the rice layer goes below.
    18. Pipe out some cream cheese in the centre of the Nori and place the veggies evenly as shown.
    19. Now, roll the sushi tightly, coat with the crunchy tempura and roll once again.
    20. Cut with a sharp clean knife into 6-8 slices, shape once again and assemble on a serving place. Garnish with spicy Mayo, some more crunchy tempura, microgreens, cream cheese and serve with pickled cabbage, pickled ginger and wasabi.
    21. To assemble the maki sushi, place 3/4 of the Nori sheet onto the sushi mat and spread rice onto it. We need to cover only 3/4 of the Nori sheet here.
    22. Pipe little cream cheese in the centre of the rice layer and place the asparagus and veggies as shown.
    23. Roll tightly and shape the sushi. Slice with a sharp knife into 6-8 slices and assemble on a serving plate. Serve with pickled ginger, wasabi and Tamari.
    24. For the sushi donut, place the sushi rice into the sides of a donut mould (lined with cling film).
    25. Pipe out some guacamole and cover with some more rice.
    26. Turn the donuts upside down and garnish with veggies, mango slices and edible flowers, microgreens, cream cheese as you like. Top with togarashi seasoning.
    27. Place the donuts onto a square Nori sheet and serve.
    28. Enjoy!!
