Melissa Clark is back in the studio kitchen for another round of Shortcut vs. Showstopper, where she makes a dish two ways: One is simple and one is a more challenging, best-ever take. In this edition, Melissa’s making … s’mores! First up: her Oven S’mores, which are made in a broiler and ready in five minutes. Then, she’ll make her S’mores Tart, which takes the elements of s’mores - marshmallows, graham crackers and melty chocolate - and recombines them in an elegant way. Instead of toasted marshmallows, you have a billowing meringue singed with a blowtorch. Which will you make? (Maybe both?) The choice is yours!

I make a s'mores rice crispy treat. It's the same recipe as your basic rice crispy treat recipe, but half of you're crispies you sub for golden grahams and you toast all the marshmallows in the broiler first. Once they're set, you dip the tops in confectioners chocolate. They were a hit in my Christmas tins last year.
I appreciate that she puts the marshmallows on their flat sides - I learned the hard way making oven s'mores that they will roll off if you put them on their round "sides".
The shortcut smores look so easy to make!! I'll have to give it a go sometime this summer

oooooh pennies as pie weights.... brilliant! It seems like every kid in her neighborhood would want to hang out at the Clark house- everything she makes looks so fun. Also can we talk about meringue and its sad end in the refrigerator? Anyone else? lol
one time i made oven smores for me and my seven roommates, put the smores on the top shelf and they caught on fire in less than a minute! set off every smoke alarm in the house, but no one got hurt and the huge charred marshmallows looked really cool-- made another round and they were very tasty (one roommate sandwiched hers with a tortilla chip bc we ran out of cookies and enjoyed it)

Um, a whole wheat cracker is not automatically a Graham cracker. If you really want something that tastes like a Graham cracker, I think you'll want to use some Barley flour.
There's no barley in graham crackers. Take a look at the ingredients of graham crackers listed on the box of any standard brand. The first ingredient is "Graham flour (whole wheat flour)". What makes them graham crackers is the ingredients added to the whole wheat flour.
