  • In this video I show you how I get 15 hrs of cook time on one full charcoal basket. If you are looking into getting a Bronco or if you are an owner, here you will learn it is possible to get a longer charcoal burn for longer cooks. I used Kingsford charcoal and mesquite wood chunks.     Thats one of the things I love the most about my Bronco! A little charcoal goes along way! After a week of contemplating on whether to buy one or not your videos helped me pull the trigger! I'm now 2 cooks in and I don't regret buying it at all! I plan on throwing a couple racks on this weekend! Keep the videos coming brotha!

      I've been thinking about trying the hanging method, do you have exp in hanging them in the bronco? If so what's your opinion?

      I've uploaded a video of hanging baby back ribs. When I hang ribs, I remove the heat defuser. If you do the same and you notice the end of your ribs will touch the charcoal, all you have to do is slice one rib bone off and now your ribs won't touch the charcoal. Dont worry, you won't burn the end of the ribs that hang over the charcoal. But watch your ribs more closely since they are being hung directly over charcoal. Depending on what temp you are running, you can over cook them. My ribs cook faster when I hang them. I don't wrap when I hang them.

    Great video, I have gotten 11 hours on my Bronco lighting a wax cube in the center of the charcoal basket. I’m going to try your method and light it at the end of the basket.

      When I'm cooking under 5 hours I light the charcoal in the middle. The method I did gets the 15 hours if temp is from 225-250. Low and slow.

    I'm so psyched. I just got one of these. I wish I would have gotten it a year or two ago. I paid through the nose but I think it'll be worth it for the heat control and build quality. Thanks for the videos

      When I hang meat, I don't use the heat defuser. I like for the meat to hang just above the charcoal. The meat will cook better and look better that way. Yeah the temp gage doesn't sit at any grate level which will throw you off on temps. When I'm cooking on the cooking grate I use my inkbird thermometer. But I have not had any issues using the Bronco temp gage when I hang my food. Did your Bronco come with the incorrect air intake?

      @@MoesBlackGoldBBQ no it came with the proper air intake i got it from academy i had to get a display and they gave me a 15 percent off cause i asked them if i could get a discount since people mess with the pit an all it came with everything and yeah i like it so far i just use my inkbird as well when i did my first season i saw that the stock temp it came with was like 40 degrees off

      Awesome on the discount. I paid full price for mine. Even during a time when they were on-sale, selling as low as $90. I looked all over where I live and other cities near by, but no luck on a deal. I learned not to trust the stock temp gage when I first cooked on my Oklahoma Joe's Highland. I thought I was cooking ribs at 225, but turned out grate level was reading 190. After the first hour, ribs looked just like when I had taken it out of the cryo bag lol.

    Man I need to get myself one of these! I got a PBC a few months ago and haven't had great results with it. Wild Temps and it burns through the charcoal way too fast. I get maybe 5-6 hours at most. Pretty damn disappointing. I do appreciate your insight and your enthusiasm for BBQing. Love the content! Keep churning em out! Smoke on!!!

    Glad to hear everyone has had a good experience with their bronco. Mine has not been. My intake vent came broken out of the box and now Oklahoma joe won’t fix the issue so now I have to ship it back to the seller just to get another smoker because I won’t buy another one.

      @@MoesBlackGoldBBQ they said i didn’t have a valid registration number? I took a pic from the smoker and sent it to them twice. That was over a week ago. They said they would send out a part on Thursday through regular mail…that’ll take how long ? I’m returning my smoker. They can keep the part!

      I see. They didn't want to help due to your Bronco not being registered on their website. Whoever you dealt with isn't good. When I called about the air intake on the Bronco not being correct size, they sent me the correct replacement even though I hadn't registered my Bronco. I was told to register when I got the chance.

    I'm on here looking for a charcoal pan extension because I never get anywhete bear that with mine.that long on mine. Thought maybe I should've bought the offset smoker because it's much easier to add more charcoal if you need to. Maybe I'll give it another try.

    Been thinking about a bronco or the highland I think you've made my decision for me. Was a little hesitant because I wasnt sure how long the basket of coal would last

      If you light the coals the way I did, you can get 12-15 hrs out of one charcoal basket depending on temp of the Bronco. I love it. I also have the Highland and it was my favorite smoker, but the Bronco has taken that title. It is fun to use.

      both are great, but if you end up going with the highland make sure its the reverse flow. i love my highland and just ordered the bronco

      @@MoesBlackGoldBBQ - I call bs. I've owned one now for 3 years and it's been very frustrating. I just did a pork shoulder at 275 and only got 5 hours out of it. The basket was full to the hilt too. Same setup too as you and every youtuber out there advertising these since I owned it. I sealed every nuke and cranny in the thing too. I've cooked at 225 - 250 it doesn't matter. I can't trust the thing to do a long cook while I sleep or anything.

      You're the first person I have come across who is not happy with there Bronco. I can feel the frustration in your comment. Normally I have to tweak the dampers to do low and slow, but I get long burns with no issues. If I cook 275 and up, that's when it's a short burn. I wonder if you got a lemon? Everyone else I've come across gets 10+ hrs of burn time.

      @@MoesBlackGoldBBQ - I have never been able to. I've done probably 30 cooks on this thing. I want to like it, arghhhh. I can't trust it to do long cooks, when I need to go to sleep. Do you get uneven internal meat temps, or all of a sudden wild temperature swings for no reason, like 50 degrees different? I don't know if I got a lemon or not when I have had the same issues as everyone else after assembly. Bad temperature gage, leaks grease where the two halves of the barrels are screwed together, intake pipe not sitting properly together. All those things are fixed except the temp gage. Like I said it don't matter if I'm cooking at 225, 250, or 275.

      You're welcome, and thank you for watching. My Bronco has held up well. I have not had an issue with it. No rust. I've used it when it rained. The paint is still intact. Wagon wheels roll with no issues. It shows no sign of wear and tear.

    I love mine!! Doing a brisket on it this weekend. Is yours dripping oil from the screw holes where the 2 drums connect?

      Let me know how the brisket turns out. Mine did, but it seems like it has stopped. It dripped from the back screws where the Bronco connects. I did tighten the screws more.

      Most people will tell you to leave the top smoke stack wide open and adjust your temp with the bottom air intake, but there will be times you have to use the top smoke stack to keep your temps low and get a longer burn with your charcoal. Fool around with both. That's the beauty of bbq, getting to know your pit.

      Yes. I start closing the bottom air intake down. If its not a windy day, I try to keep the top smoke stack at #4. At times its hard to bring your temps down if you let it get to hot. I like using a weber cube to start my charcoal, but other people still use either a half or full chimney of charcoal to light the charcoal basket.

      Thank you for watching! You will not be disappointed with the Bronco. I had 1 probe on the cooking grate level reading the temperature. The 2nd probe was reading the internal temp of the Chuck Roast.

      You're welcome. I've only used a water pan once and felt the Bronco can do with out it. For longer or any other cooks I don't use a water pan. Honestly it wasn't made to use with a water pan. Its not like the Weber Smokey Mountain.

      Oh yeah, 15 hrs. If done right like I did in the video, it can be achieved. Or you can purchase the larger charcoal basket from Oklahoma joes website to get way longer cooks.

    Do you not have the heat deflector plate to show the charcoal? I love my bronco. I want to buy a basket from slow hand bbq his basket can hold 20lbs in his bronco he did a 37 hour cook keep up the videos.

    Great Vids man. Im from Mexico and have a question. It doesn't get charcoal smoked ? You know, cause the charcoal aint burned yet. We usually burn charcoal till it gets white before smoking, grilling ,etc. Just got my broncos too ! Saludos!

      Thank you for watching! Nah the charcoal smoke is fine. If you want long cooks in the Bronco, you will have to do some type of minion method and the charcoal will slowly burn through your cook. If you light up all your charcoal in your basket, you won't get a long burn, especially if you're cooking a brisket. But the charcoal smoke won't damage your meat.

    I have a Barrelhouse Cooker for past 2 years. Easy to operate but I've outgrown it. Looking at purchasing either the Oklahoma Joe's Bronco Pro in Orange or the Hunsaker Vortex Drum Smoker. I'm torn as to which one to get. Really want to go with the Hunsaker if I am going to spend $700 plus but I like how the Oklahoma Joe's Bronco Pro is built like a tank. I like the way the hanging racks are on the Bronco Pro as well. I know many people knock Oklahoma Joe's / Charbroil brand but this Bronco looks well built. My only concern is that I do not know if the Pro has the messed air intake and I have heard that the screws are not tight enough on the Pro to where there is a lot of leakage when smoking. What is all of your opinions? Should I get the Bronco Pro in Orange or the Hunsaker Vortex Drum in Blue? Thanks.

      Me personally since I have the bronco, I would go with the bronco. I noticed the issue when it came with the bolts and leakage, mine was mainly grease but with the cooks I have done, that problem has been sealed up due to the smoke. Honestly that was a minor issue. Since my first cook no where on the bronco has it leaked smoke. The metal is better than your low cost smokers. It's tough. I can get 15 hours from one full charcoal basket. I can easily hang 9 spare ribs. The air intake was a minor fix. Char broil sent me the correct size air intake for free. To be honest I haven't heard anything about the issue of air intake when it comes to the bronco pro. Only smaller version like mine. You could look that up if you want. Overall it is the best $269 I have spent on a smoker.

      It varies. It all depends on how much charcoal you use and what temperature you are shooting for. It's hard to say.

      Thank you for watching and happy you liked my video. I did have to adjust both air intakes in the beginning of the cook, but majority of the cook, I kept both air intake pipes at #2. Weather plays a factor in keeping temps low, so keep that in mind. Adjust to the lowest numbers to get a longer burn. Less oxygen keeps the charcoal from igniting quickly.

      Yeah, with the 18" Bronco, small briskets can fit. The Bronco Pro can fit larger briskets

      It is. Smoking in that drum smoker all I want is smoke. Not enough air to get into the smoker to ignite the wood. Wood chunks are just used for smoke. The charcoal in the smoker is main fuel source.

      I love the Ink Bird thermometer. It has 6 wiring ports to monitor grate temp and internal temp of your meat at the same time. Its the best $60 I've paid for that is a bbq product.

      Well I began to smoke a Brisket on the 9th for my Birthday. It had held temp at 250 and then when i got out of the shower, it was at 275. Long story, short. I had to finish my Brisket on my Pit Boss. I'm going to try a "tri-tip" this weekend on it.

      Keep cooking on it. You will learn how to control temp better and really understand how the Bronco works.

      Thank you for watching. I have the smaller size 18 inch Bronco retailed at $299. But if you look around you could get it cheaper.

    Were your wood chunks moist and does the smoke ever burn dirty?....I have a highland offset smoker and fire management is a job

      On the Bronco heat management is easy. Once you learn it, it will become a set it and forget it smoker. All you do is adjust both air intakes pipes to desired temp.

      I filled it up to about half an inch before reaching the middle bar of the basket.

      No. I believe the basket can only hold 8 pounds of charcoal. I just poured the charcoal until it was about half an inch from reaching the middle bar.

      The Bronco won't disappoint. As you saw you will easily get long cooks with it.

      No my chunks were dry and I have never had dirty smoke. It burns clean.
