Just some advice with marinating. You should consider adding an acid to your marinade aswell as leaving overnight. Adding an acid like yogurt, lemon, or even soy sauce will help break down tougher meats like beef or mutton. Beef can be tricky because the idea of cook it longer makes it better doesn’t necessarily apply. With beef, if you cook it for too long even on a slow cook, you will eventually lose the flavour out of the meat and it may develop a “stringy” texture. I used to only marinade my curry’s with oil, but after changing to a few spoons of greek yoghurt, i can never go back. Hope this helps ! :)
