    Pollo e Funghi Recipe
    Pollo e Funghi is a classic Italian dish that combines chicken and mushrooms in a creamy sauce. Here's a recipe you can try at home. I use both chicken breast and thigh fillets for a reason, some family members prefer thigh and some prefer breast which is why I cooked both however you can use either one.
    Ingredients:
    4 boneless, skinless chicken breasts
    4 boneless chicken thighs cut in pieces
    1/2 packet of fettuccine noodle
    1/2 cup all-purpose flour
    Salt and black pepper
    1/4tsp oregano
    pinch of dry thyme
    4 tbsp butter
    1/4 cup or more olive oil
    1 onion, chopped
    5 cloves of garlic, minced
    1 cup sliced mushrooms
    2 cups chicken broth
    1 cup heavy cream
    1 cup grated Parmesan cheese
    2 tbsp chopped fresh parsley
    Instructions:
    1.Cook the fettuccine noodle according to the packet instructions, drain and leave it aside
    2. Pound the chicken breasts to an even thickness and season both sides with salt and black pepper.
    3. Dredge the chicken breasts and thigh chopped pieces in flour and shake off any excess.
    4. Add olive oil to the pan then add butter over medium heat
    5. Add the chicken breasts and cook for 5-6 minutes per side or until cooked through then cook the thigh pieces the same way.
    6. Remove the chicken from the skillet and set aside.
    7. Add the chopped onion and minced garlic to the skillet and sauté until softened.
    8. Add the sliced mushrooms and cook until tender.
    9. Pour in the chicken broth and bring to a simmer.
    10. Stir in the heavy cream and grated Parmesan cheese.
    11. Return the chicken to the skillet and spoon the sauce over the top.
    12. Simmer for a few minutes until the sauce has thickened.
    13. Add the fettuccine noodle and mix well to combine
    14. Sprinkle with chopped fresh parsley and serve hot.
