Thank you, Anna Olson. That Kefir tip is a hit. I don't have Buttermilk but always keep Kefir because it's so easy to make. And also increasing moisture with other things when reduce sugar.

And I live over 6 months a year on a sailboat out of Nanaimo. Cooking and Baking healthy foods is a bit of a challenge but well worth the effort Thank You very much

I did two single batches, and got bold with a double batch. The single batches are easy to handle, and created for the average Joe, like me, which can be handled easily. 😮 I'm stunned right now. When vacationing in Lake Tahoe or Mammoth, I've baked some bread and cookies. I followed instructions to INCREASE the temp by at least 25°. It's so surprising right now to be instructed to LOWER the temperature. 🤷♀️ (My baked goods actually turned out with increasing it 😊) PS. I ABSOLUTELY LOVE what I call the 'lid" of the muffin ! 😋 I could eat them and nothing else !! 💜
Do you use a butter you prefer I am from UK I love the baking butters here my favourite is Larpak unsalted butter but I have known some good bakers prefers a certain butter what could they be

QUESTION: If we want to use WHOLE WHEAT FLOUR, how do we substitute it from the All Purpose Flour?
Anna says in the video to only use 50% of total flour requirement as whole wheat and the other 50% as all purpose.
