The moment when Gaby said the crimping is very personal to every person made me realize that any kind of dumpling shape in any cuisine truly has the same thing. My mom and my grandma both crimp pierogi closed in different ways, and watching Claire and Gaby do them is so nostalgic.
We do a kind of Cantonese version of mini (2.5 inch diameter) fried empanadas here in Hong Kong (also in southern china i think) for Lunar New Year. My whole family works on it every year. My 3 aunts and 2 cousins and grandma along with myself all do the crimping and filling. The shape and the fillings are all different for each person, to a point that we can recognise who done which XDDD

Yeah! Isn't that so cool? My mum and dad fold dumplings in different ways, and I never got the hang of either, so I just kept doing it the cutesy kid way my dad's mom taught me when I was little. When we make dumplings together, we end up with three different kinds xD

The look that Claire gave when Gaby said “see thru” was priceless! I love how you can always tell you’re in or looking in a chef’s kitchen with all their gadgets. That being said, I hate seeing what my cooking arsenal is lacking.
A lot of the gadgets are kind of extra - handy, but not necessary. A bowl/dough scraper is amazing for baking though. I like how Gaby uses a tea strainer for a dusting spoon. Multi-use tools are where it's at.
Yeah my first couple months of quarantine was just watching BA all day so I felt like I had human interaction. I'm so SO glad Sohla spoke up and that so many left, but it definitely hit harder than it would have any other time/year.

I think that this video grasps what I love the most about cooking. For me cooking is social activity, even if someone just comes to the kitchen to ask what I'm making it already gives us so much space to open a conversation. And learning how to cook? Even more amazing. It's someone showing us how they fulfill one of their most basic needs. And the shared stories that so often come with those dishes, I love them dearly.
Claire’s reactions are insanely relatable. The whole time I’m watching and when she’s like “water? I’ll get that later” I’m going “oh I’m glad I’m not the only one who goes into something without reading the whole recipe before hand”

This was so joyful! I love Claire (as a Missouri girl myself) and I’ll watch 30 minutes a week of her making space in her fridge if that’s what’s on offer, but I do miss her interaction with the regular guest stars from the test kitchen. So it is MARVELOUS to have Gaby here for this! As a left-handed person who has struggled all my life learning manual fine-motor tasks from right handed people (my grandmother teaching 8-year-old me to crochet is a pivotal and cherished memory), I was watching this and coaching Claire, muttering repeatedly, louder and louder, “fold the opposite direction” building to a crescendo “you have to do it BACKWARDS, Claire, fold the opposite direction!” She got it in the end and they looked beautiful, but I felt that struggle.
When my old college roommates and I zoom, they're always like "elleeeeennnnnn" cuz I have my teaching license account thru school that has no time limit. 😅
This was such a cool episode! Don't get me wrong, I absolutely adore all the other dessert person episodes as well, but if you'd be up for it I'd totally love to watch more of these types of videos as well :)

It's actually pretty easy. Put vanilla beans in a jar with either brandy or vodka, and let it hang out. I've seen in her videos, when she scrapes out a vanilla bean for a recipe, she'll put the rest of the bean in the jar.
@@beth8775 I find that I like white rum for mine - one of the nice things about making your own, you can personalize it. I use Madagascar vanilla, which tends toward the more robust, so the rum tends to carry that potency over that I like so much. great stuff, and the longer it sits, the better it gets (looks at my liter of 2 year old) I just make it right in the bottle, too. just open it, pour myself a shot for later, then take about 10 beans and right into the bottle, close it up, stick it into the dark cabinet. shake it every day for a week or two, then ignore it for a couple months minimum (soonest I've ever used mine has been 3 months) and once you finish the bottle, pull out the beans, put them into another bottle, with some fresh beans as well.

this is such a great episode. Watching Clair trying to learn a recipe from a video - even if it is real time - is so relatable right down to trying to find a spot in the fridge.
Gaby is the most positive person ever. She’s the teacher everyone needs when they first cooking/baking. Claire you did a fantastic job and I know it’s hard learning something new when you’re left handed. It took me a hot minute to learn how to load suture for some of surgeons who are left handed.
I get the sense that people bringing their culture to America cook with *so much love.* We see it here with Gaby, who does everything with all the love in her heart anyway, and like those old Italian grandmothers making pasta for the entire neighborhood and just openening the door and letting folks wander in. My friend’s mother grew up in Romania and would always have so much food on the table ready for us when I came over. Didn’t matter if it was 3 pm or 9 pm.

I get the sense that people bringing their culture to America cook with *so much love.* We see it here with Gaby, who does everything with all the love in her heart anyway, and like those old Italian grandmothers making pasta for the entire neighborhood and just openening the door and letting folks wander in. My friend’s mother grew up in Romania and would always have so much food on the table ready for us when I came over. Didn’t matter if it was 3 pm or 9 pm.
