Fresh Halibut Tacos with Mango Salsa and Rice; A Family Favorite!

  • Here's a delicious and simple recipe we use for halibut. This would work for any fish you'd like. I've listed two recipes below. One is for the Halibut Tacos with Mango Salsa and the other is for the Taco Rice I like to pair it with.
    Halibut Tacos with Mango Salsa
    Ingredients:
    2lbs of Fresh Halibut
    2 Tablespoons of Taco Seasoning
    1 Cup of Red Cabbage
    10-12 Grape Tomatoes
    1 Cup of Chopped Mango
    ¼ of a Red Onion
    1 Lime
    1 Bunch of Cilantro
    1 Pepper (color of choice)
    Instructions:
Cut your halibut into bite size pieces.
    Slice your cabbage.
    Chop your mango.
Add cabbage and chopped mango into a bowl.
Slice pepper into small bite sized pieces.
    Add it to your bowl.
Cut your tomatoes into quarters lengthwise and add them to your bowl also.
    Chop your cilantro.
Add almost all of it in as well. (Save some for your garnish at the end)
Cut up your onion and set it aside.
    Cut your lime in half.
Slice one half for garnish at the end.
Use the juice of the other half and squeeze it over your mango salsa mixture in a bowl.
    Add salt to taste.
    Mix together.
In a large pan with olive oil, add your onion and your halibut.
Give it a mix and cover with a lid for a couple of minutes. (Halibut cooks FAST)
Remove the lid and add your taco seasoning.
    Gently mix the two together.
Spoon halibut into your taco shells.
Top with your mango salsa mixture.
    Enjoy!
    Taco Rice Recipe
    Ingredients:
1 ½ Cups of uncooked Basmati Rice
    3 Cups of Water
    1 Tablespoon of Butter
    Salt to taste
    1 Can of Stewed Tomatoes
    1 Tablespoon of Taco Seasoning
½ Of a Red Onion, Chopped
    Instructions:
Pour your water into a pot over high heat.
Add your uncooked rice, butter and salt.
Cover and let it come to a boil and then turn down to low.
    Do NOT lift the lid.
Set a timer for 19 minutes.
After about 16ish minutes, start to cook your onions in a large frying pan.
    Stir in your stewed tomatoes.
    Season with a little salt.
Once the timer is up on your rice add it to your frying pan.
    Mix everything well.
Add in your taco seasoning and mix thoroughly for a minute or two.
    Enjoy!

Watching you prepare dishes is quite enjoyable. I think it is the way you present your preparation. No frills efficient cutting with just the right amount of time to view, fresh meats and brightly colored vegetables. The lighting is perfect, nice balance of background noise combined with the volume and style of music. Your videos are a delightfully pleasant experience.

Looks AWESOME!! Thanks for your ideas, Sarah!! Can't wait to get my hands on some Halibut!
My friends in Juneau caught a 594# Halibut in Berners-Lee Bay back in 1997. I prefer the small ones, much better and less grainy. We used to go out fishing 1 time a year, and get enough for the whole year. Sure miss seafood!
