Rosemary And Red Wine Elk Roast

    Rosemary And Red Wine Elk Roast
    Ingredients:
    1 Moose Roast
    ¼ Cup of minced Garlic
    ¼ Cup of Olive Oil
    1 Tablespoon Salt
    Fresh Rosemary
    1 ½ Cup of Beef stock
    ½ Cup Red Wine
    Instructions:
    Combine your olive oil, and minced garlic in a bowl.
    In a Dutch oven, add your moose roast.
    Cover all sides of the roast with your salt.
    Brush on your garlic and olive oil mixture.
    Pour in your beef stock and red wine.
    Top with fresh Rosemary.
    Cover your roast
    Set to 300°F for about 2.5 hours
    Remove, let sit for 10 minutes before cutting.
    Keep your drippings for the gravy recipe below…
    Gravy:
    Heat your remaining drippings on medium/high heat.
    In a bowl combine flour and water until it’s about cheese sauce consistency. Make sure there are no lumps remaining.
    When your drippings boil, turn the heat down a little.
    Slowly add your flour/water mixture.
    Whisk for about a minute. (If your gravy is still too runny, mix another small bit of flour and water in a bowl, and add it in.)
    Once you get the consistency you like, serve it hot over your roast and mashed potatoes!
    Enjoy!
    Garlic And Parsley Mashed Potatoes
    Ingredients:
    Yellow Potatoes, boiled and cooked
    1 Cup of Butter
    ½ Block of Cream Cheese, at room temperature.
    1 teaspoon of Salt
    1 teaspoon Garlic Powder
    ¼ Cup Chopped Fresh Parsley
    ¼ Cup of Milk
    Instructions:
    Wash Potatoes (Leave the peel on)
    Add them to a pot with salted water and boil until tender.
    Once they’re cooked, drain water.
    Add your butter, cream cheese, salt, garlic powder, parsley, and milk.
    Mash with a potato masher until they’re the consistency you like.
    Serve them hot!
    Roasted Radishes Keto Friendly
    Ingredients:
    2 bundles of Radishes
    2 Tablespoons of Olive Oil
    1 Teaspoon of Garlic Powder (Optional)
    Salt to taste
    Instructions:
    Preheat oven to 400°F
    Take the green tops off your radishes and wash them.
    Put them in an oven safe glass dish.
    Add your olive oil, garlic powder, and salt.
    Roll your radishes around so they are thoroughly coated.
    Put them in the preheated oven and cook for about an hour.
    These are delicious to enjoy as a side or in place of potatoes!

      I've ate radishes all my life & never seen them like this. So today I made this for my 83 year old parent's. We loved it. It was so good. We used our last Elk Roast. We made the chocolate bark again Saturday. We put blue berries pecans & almonds in it. I can't wait to see what's next. We eat a lot of fish & chicken. Thanks for giving us new ideas. We love the simple, easy, beautiful & healthy meals. Sarah, Thank You for taking good care of Steve. We all can tell he is So In Love...Two WONDERFUL people together...God ordained that.

    Oh my goodness, Sarah! Another Delectable meal. You even served roasted radishes, one of my favorite yummies. My late Aunt passed the love of them on to me and I've been missing them for a while, not being reminded, because literally almost no one else seems to know of their goodness. I know the star of the show is your tasty elk, but I was caught off guard. Thank you Sarah, for reminding me of yet another food I Love. Will make some tomorrow and be Grateful.

    I learned the hard way. Don't ever set a heated Pyrex bowl or plate on a burner on a hot stove. It can burst. The meal looks scrumptious!

    Beautiful Roosevelt elk. I just love a wild game roast with wine. Antelope roast is marvelous this way. And i have never seen roasted radishes, but i love radishes so i gotta try that.

    I didn't care much for veggies besides corn until I learned to roast them with olive oil, salt and pepper. But I had never heard of roasting radishes! I can't wait to try it!

    Well, now I'll have to add radish to the list of things to grow this year. Sarah, this dish looks delicious. Loved your halibut dishes, as well, it's my favorite, along with wild caught salmon. I've got to admit, I'm envious of your ability to catch this fresh seafood, just about anytime you want, and of course hunt the game meat. Thank you for the recipes. My Mother was gifted some game meat, and, had never cooked it before. She decided she'd mix it in with domestic meat, as she was told that game meat is a lot leaner meat. She made meat pies, that were absolutely incredible.

    Looks scrumptious. I’m going to try the toasted radishes that’s the first time I’ve seen it done but they taste much like a turnip! I’ll bet it’s delicious and they really look pretty on the plate! Great job.

      Now I thought those were tomatos! I didn't look good enough. I've never tried radishes cooked. I've only tried them in my potato salad. If my mother had extra radishes, I'd eat them raw with a little salt. I've never tried turnips at all. Maybe I've seen them, but have never eaten them.

      My mom's generation of country cooks used to cook radishes regularly. However, don't hear of radishes cooked in many newer recipes.

    Really good! And very interesting too. I love the way you combined the ingredients to bake those mashed potatoes, and then what you did with those radishes looked darn interesting! I have never seen anything like that with radishes before! Bet it mellows them out a bit. It was funny, I do keto and intermittent fasting plus in addition to a lot of DIY stuff and such am always looking at different ways to fix vegetables. The other day, I kid you not, I was thinking “Hey, what about radishes? “, what all can you go with them? Shazam! I see this video. Another thing you could “cook up”(pun intended), in spring maybe, is show us what all you grow up there in your clime.     Never cooked radishes! When I saw the thumbnail I thought, grapes? Then in video I'm, radishes? I have to try that! You make some amazing dishes! For the life of me, I can't cook a roast in the oven. Every time I have tried I have failed! I cook mine on stove top or slow cooker, success every time!     When you lifted the lid off that roast and it steamed up the lense, I could almost smell the savory meat...mmmmmmm!

    Absolutely beautiful and you make it very uncomplicated when most make things look so hard to make when they can make it A LOT easier. And I’m going to guess it’s Steve doing the camera work which I will honestly say he really does a GREAT job and the meats are gorgeous!
    I didn’t see it in the description but it’s probably there and missed it, I live in California at a low elevation of 2,400 feet. I think just guessing that your at a much higher elevation, so do I need to adjust the temperatures and times?

    This is my most favorite dinner meal EVER! Perfectly prepared! For those of you who don't know, a medium-rare finish in an Elk roast is not really possible. There is no "marbling in a roast because Elk is very lean so the roast transfers heat too well, and oven-time play's a very important roll here. Pull it out to many times to check it and the roast dries out, and chips (like pork). This looks awesome!

    Another fine looking meal !! No Halibut or Moose in the freezer but I do have Elk!! I finally drew a archery Roosevelt tag with 12 preference points last year and got lucky! I usually cook my Elk a lot like your Moose steaks but not next time . You guys eat like we eat "GOOD" !!

    Roasted radishes. I love radishes cold and crisp with a sprinkle of salt. I will have to try them roasted.
    Do they taste anything like parsnips when roasted?

    I never would have thought to roast radishes like that! I've never had a cooked radish and I don't care for them raw, but will have to try them! Your entire meal looks wonderful!
