My wife loved eating freshly made vegetables - especially while she was battling cancer - a battle she lost 13 yrs ago. She would actually pick dandelions from our yard and make salads with them. Sometimes I would play this song on guitar and having no roots in the South like I do, she asked me what Polk Salad was. I pointed to it outside the window. So she grabbed a bunch of the leaves, blanched them several times and we ate polk salad w dinner that night.

Tony White’s song has been a favorite of mine. I saw him play at the 1969 Texas International Music Festival, It just him and a drummer. Today I wondered who else might have covered this song. Well, this was a real treat. It’s a more bluesy version but just as good. ❤

This is very good - love it. As a guitar player myself who is still trying to make my band tighter...this a great example of a band that knows what they are doing. The drums and bass are "carrying the song along..the the piano joins in and makes it sound great and then all the guitar player has to do is lay back and throw in a few fun tasty fills....as it was once said - " and thats the way you do it"

A poke is a bag of some kind. When we'd head south, and go to a store, they always asked you what kind of poke you wanted. My dad was from Tennessee and he would plant different kinds of greens, mustard, turnip, ect. In the back yard. When the greens got high, he'd go out and pick them for the dinner pot, after that he'd mow the back yard. He got himself "a mess of greens and put them in a paper poke". Hence, poke-salad.
No. It's called poke salad because it's pokeweed. And it's not really salad, either. It's sallet, which refers to cooked greens. You can't eat pokeweed raw. You have to cook it.
Stephan, I like my explanation better, it's more romantic. And yes, my mom would take the "mixed" greens from the poke and boil them down with bacon renderings and/or fat just like mustard greens. But I think my favourite was when Grandma would go down to the stream, pick a mess of watercress, look it, wash and dry it. Then cook bacon and pour the hot grease over it. She called it "killed lettuce". I love the way that different parts of the southern states leave a different heritage. I know my own people were Irish, Scottish, German, Dutch, and English and the tales differ by which side of the family you visited I hope this knowledge and the tales have been passed down are never lost.

See Tony Joe White in 2014 on the David Lettermen show with the late night band and The Foo Fighters performing "Polk Salad"... and I saw Elvis perform this song several times in Chicago in the 70's.
