第一,打發蛋清的盆裡面不能有水(也不能有油,這也是全單難打發的原因)
第二,要是加固體油或者油脂含量高的加到蛋黃液裡面。
第三,重點,不能在混合蛋白霜和蛋黃液後過度攪拌,要快,且從下向上攪動,次數盡量少
