A small piece of advice: before stuffing the cheese between the onion rings, spread them out on a baking sheet or something similar and freeze them for an hour until they are solid. After that, unfreeze them in a bowl of tepid water. This will have a twofold effect, one is that it will make the rings tender and two this will allow you to remove the onion rings inner membrane. You want to remove it because it can make the coating slip.

What do you dip them in? I don't think Cocktail sauce pairs well with onions, right? Ketchup is great with onion rings, but not for the cheese, but still better then cocktail sauce, right? Maybe some-kind of tangy bloomin sauce? Something mayo based with kick. I looked up a recipe, and it seems like you could take the cocktail sauce, and mix it into mayo, and maybe add a few spices, and that would be bloomin sauce. I might try that some time.

What do you dip them in? I don't think Cocktail sauce pairs well with onions, right? Ketchup is great with onion rings, but not for the cheese, but still better then cocktail sauce, right? Maybe some-kind of tangy bloomin sauce? Something mayo based with kick. I looked up a recipe, and it seems like you could take the cocktail sauce, and mix it into mayo, and maybe add a few spices, and that would be bloomin sauce. I might try that some time.
